Penne with Griddled Vegetables

I thought it was about time that I submitted an entry to Ruth's weekly Presto Pasta Nights.
Ruth always posts a great roundup of pasta dishes for us to enjoy, every Friday.

Who needs a cookbook?

Well, maybe for a spot of bedtime reading :)



















I decide to re-visit my Griddled Vegetable Salad for this pasta dish. I didn't make a single change, it was so good the first time around. I used the same basil dressing too and it coated the pasta beautifully. I served this salad warm, to maximise the flavours, but I think it would make a good cold pasta salad too.

  3. Hey Peter, I have been walking along beaches and doing a spot of gardening. I wanted to see what the sn looked like :P

    It has to be good Val! Add some veggie sausages, vegetable kebabs and a banana on to the barbie for me :)

  4. Great idea, Holler. I love pasta but never know what to do with it, so usually re-visit the same dishes over and over. I love the idea of the dressing as a coating for the pasta. Yum! Another one I want to try.

  11. Yum! Don't know about 'griddled' (I'd call them 'grilled'), but the dish sounds yummy! And cold would be delightful, I'm sure. :)

  12. Hi David, I called them griddled because I did them in a ridged griddle pan, that's what gave the charred lines.

    I have a ridged griddle pan so must get more adventurous with it (though it's doing sterling service with the asparagus at the moment)
