Mango, Basil & Balsamic Dressing
















This is my entry for No Croutons Required. The challenge for August is to make any dressing, post about it, including a description and/or picture of what you dressed up.

I had a mango who was becoming very ripe, glaring at me accusingly from the fruit bowl. I stared at him a while before deciding he would make a lovely fresh salad dressing.

Mango, Basil & Balsamic Dressing
















1 mango cut into chunks (I am getting my money's worth out of that mango splitter).
1 handful of basil
2 tbsp olive oil
1 tbsp balsamic vinegar
freshly ground black pepper


Whizz up all the ingredients to make a lovely fresh dressing.














And now for the salad I dressed. A simple one with lots of flavour.

Cucumber
Celery
Strawberries
Feta Cheese
Basil

  7. L'il Burnt Toast bought a whole case of mangoes that she couldn't eat quickly enough. We could have made this dressing with the last few ripe ones:D

  10. I think I must be the only person in the world who hasn't had strawberries and balsamic vinegar! I love the idea but when the moment arises I just can't bring myself to do it!

    Hi Beth it is yummy. If you like a thinner dressing then try some extra olive oil.

    Hi Caked Crusader My hand is up too! I haven't had strawberries with balsamic vinegar and I don't think this dressing counts because of all the sweet mango and basil included.

    It was yum Lore!

    I am making hot mango chutney with the rest of my mangoes Silvie, but I am tempted to buy more so I can make your salsa. Heck who am I kidding, any excuse will do to get to use the mango slicer again :)

  19. Hi Usha, it makes for a very fruity dressing. Quite a thick dressing too, but you could thin it down with either orange juice or a bit more olive oil.
