Chocolate Chip Cookies with Fudge

























This is my favourite cookie recipe and I use it again and again, adapting it as I go. It makes a lovely crisp cookie, that is chewy in the middle. You may want to half this recipe, but I like to make lots to share around. In fact, last time I made these I doubled the recipe.





















Chocolate Chip Cookies with Fudge

2 ½ cups plain flour
¾ cups cocoa powder
1 tsp bicarbonate of soda
1 cup caster sugar
1 cup demerara sugar
1 cup/2 sticks/225g butter, softened
2 tsp vanilla extract
2 large eggs
100g caramel fudge chunks (if you have trouble
finding these, try Asda)
50g white chocolate chunks
50g milk chocolate chips


Heat the oven to 375f / 190c / gas mark 5.

Combine the flour, cocoa powder and bicarbs in a bowl and mix thoroughly.

In large bowl beat the sugar and butter until light and creamy. Add the vanilla extract and eggs and beat well. Next add the flour mixture, a bit at a time and mix until you have a velvety dough. (I love this dough, it feels so lovely).

Pour in the fudge chunks and chocolate chips and mix in. Chill the dough in the fridge for 10 minutes or so.

Roll the dough into balls (roughly the size of a golf ball) and squash slightly onto a baking tray covered in greaseproof paper. I only bake 6 at a time, leaving a bit of space between the cookies. they do spread, but it depends on the size of your baking tray.

Bake for 7-8 minutes for a chewy cookie. They should start to crack when they are ready.

Leave to cool on the tray for a few minutes before transferring to a wire rack.

Makes 24 cookies



















Don't you just love Cooper's little Steiff bear? I love him, although I do feel a bit mean when I pack him away in his little suitcase. It just seems wrong somehow.

I cannot mention Cooper without including a gratuitous photo of my little cutie. You will have to bear with me (excuse the pun) through my baby love phase.

  1. aww I love the little bear in the photo - sylvia has a steiff bear too - from scotland - and we often catch him speaking german to her (well you know the type of german from old war movies)

    And I bet if you turned your back this bear would eat a few of those cookies - I know I would if given half the chance

  2. I will be keeping an eye on that bear now Johanna, I bet he has a few choice things to say about me for stuffing him in that suitcase! Good job I can't speak German. If he does a fake German accent, I will just pretend not to understand that either. "Ich spreche kein Deutsch".

    I think my favorite thing in a cookie is caramel. Milky Ways are my favorite candy bar too. So this cookie recipe is going to be a favorite. Copying now.

  20. Love that bear! And I find it quaint that he "lives" in his suitcase. :) Just like a little...er... cottage!

    As for the cookies -- it's so rare to find a cookie that really does the job of being crisp on the outside and deliciously chewy in the center. Will definitely have to put these on the "to try" list. (Peef. my little chocoholic man, would LURVE them!)

  31. Really nice recipe, Jacqueline!!! I tried it this afternoon and the cookies taste very nice, but I was not able to get the consistency of the lovely cookies of your photo... The dough I got was in fact stickier than velvety, and afterwards, the cookies did not rise while in the oven, but expanded and were really flat... Have you any tip for me? It was a real pity! (I'll try to do it better next time...).

    But in any case, they are really yummy!!!! Thank you for the recipe and congratulations for your interesting and delicious blog!

  32. Hi Julia, was the butter just soft or quite melted? Did you cream it until it was light in colour and creamy? I can't think what else would go wrong, They always work out the same for me. It sounds like there was too much liquid or not enough flour , if it was sticky. Apart from that I am stumped and disappointed. These always turn out perfect for me :(

  33. Thank you for your answer, Jacqueline! Yes, you are absolutely right, I fear the problem was the butter being too soft. Next time I will absolutely pay more attention to that!!!

    Anyway, do not feel bad: your recipe is perfectly explained, it is just me, that I am quite clumsy as far as sweets are concerned... :-P

    Just a short comment to confirm that your guess was just right: I tried again with the butter soft but not melted and a bit more of flour, and it worked all right!!! I got a lovely batch of cookies (I'll keep improving them in future retries, but the result of this second one is quite satisfactory!!!)

  35. I am so glad that helped Julia, they are my favourite cookie. Next time you try them, try either putting a rolo or a small dollop of peanut butter in each cookie. Make a dent in each ball, put the filling in and close the ball around it before flattenng them just a little. Lovely :)
