Caprese Salad with Chilli & Lime


A bit of a last minute submission for this month's No Croutons Required.

We are not getting much of a Summer here in Scotland, but I am enjoying a lot of salads and one of my favourites is a caprese salad. I usually treat it to a drizzle of a balsamic and mustard dressing, but in honour of No Croutons Required, I have made a chilli speckled dressing.

Milky slices if fresh mozzarella, slices of ripe, juicy tomato, a sprinkling of basil leaves and a drizzle of my chilli & lime dressing. Mmmmmmmm.

Chilli & Lime Dressing
A simple dressing that will add a speckling of colour and a zingy flavour to any salad.
Ingredients
  • 1 tsp chilli flakes
  • finely grated peel of 1 lime
  • freshly squeezed juice of ½ lime
  • 1 tsp honey
  • 4 tbsp olive oil
  • freshly ground black pepper
Instructions
Simply whisk all the ingredients in a bowl and season with black pepper. Taste and adjust to your own liking. You can add more or less of any of the ingredients.

  6. Oh, my, oh, my! Love your Caprese, with the chili, and lime twist.
    Love to add spice to traditional well known dishes, and always but always have lime on hand. Here in South Florida we have an abundance of lime, all year round. So affordable...sometimes you can buy a dozen for $1.00!

  12. A bit of heat is what we need, indeed..What is going on with the weather here!? Not a very nice welcome having just arrived back in London from Tarifa. I'm freezing; think I will need to drink this dressing with extra chilli added to warm up!
