Mocktails at Christmas are such a treat. They taste even fresher than their alcoholic counterparts and leave you with a clear head. They're also a great way of topping up your vitamin quota for the day in these times of sniffles and sneezes.

Innocent asked me to come up with a mocktail for one of the 12 days of Christmas and I was happy to oblige. I'm number day number seven, but just to refresh your memory......

Seven Swans a-Swimming! "Blooming heck," I thought, "what do I do with that?"

It was a bit of a stretch of the imagination, let me tell you. The lucky sods who got number one and number eight were laughing, with their milk and their pears, but seven swans a-swimming?

I've concocted the most divine mocktail you will ever have the pleasure to drink and I call it .......

Seven Sips a Sparkling

Fresh pineapple, Innocent apple juice, fresh ginger and mixed spice all finished off with some spicy fizz of ginger beer. It is divine!

Merry Christmas everyone!

And a big thank you to Innocent for my rather wonderful recipe card.
