No Croutons Required - Challenge for February
A soup and salad challenge, but this month it's salads only.
It's still cold here, but that is no excuse to ignore salads, especially if you bring a bit of imagination to them. I love salads all year round and I hope you do too.
This month's theme is : Potato Salad
It doesn't have to be creamy either, you could try curry, pesto, hummus or a herby dressing. I really hope you can come up with some really exciting dishes.

To enter this month's NCR, simply post your potato salad recipe before the 20th of February, link back here and add it to the linky below. As usual, all entries must be suitable for vegetarians. I look forward to seeing all the entries and probably trying most of them. I do love a good potato salad.
In my, admittedly limited, experience there's no such thing as a 'good potato salad'. I look forward to being proved wrong.

DeleteHmm, interesting one. I don't think I've ever knowingly made potato salad. Perhaps this'll be a good incentive to give it a go!
ReplyDeleteYes do Caroline and remember it can be layered like other salads, doesn't have to be mixed together.
