Potato and Bean Salad with Zingy Herb Dressing

A substantial Summer salad that is easy to throw together and finished off with a fresh and zingy lemon and coriander dressing.

We are enjoying some glorious weather here in Scotland. It's wonderful!

I don't remember such a good summer for years. I know it can't last, but I am enjoying it while I can.

It puts me in the mood for salad.

POTATO AND BEAN SALAD WITH ZINGY HERB DRESSING


Wholegrain rice, jersey royal potatoes, kidney beans, black eyed beans, ripe red salad tomatoes and roasted red pepper dressed in a coriander and lemon dressing.

It's colourful, filling and fresh. 

Frugal too, as I used what I had to hand, some very ripe tomatoes and the last pepper in the jar.

Potato and Bean Salad with Zingy Herb Dressing
A substantial Summer salad that is easy to throw together and finished off with a fresh and zingy lemon and coriander dressing.
Ingredients
  • 250g cooked wholegrain rice
  • 300g cooked jersey royal potatoes, sliced
  • 400g tin black eyed beans
  • 400g tin kidney beans
  • 2 large ripe salad tomatoes
  • 1 large roasted red pepper
  • 25g fresh coriander
  • 3 tbsp olive oil or cold pressed rapeseed oil
  • the juice of 1 lemon
  • a good grinding of black pepper
Instructions
1. In a large bowl add the rice, potatoes and rinsed beans.2. Chop the tomatoes and pepper and add to the bowl. Give it all a good mix.3. Whizz up the coriander, oil and lemon juice and add to the salad. Season with black pepper and mix well.4. Enjoy!

  8. love the rice and potatoes in salad together which is a sign of it being cold here and I just want carbs not salad - but I am sure come summer I would love it because it is so full of good stuff

  11. Nice salad, simple and delicious. I like to add some honey and thousand island sauce for dressing. During hot weather, try to have salad for a light lunch, always feel refreshing. :)

  13. Lovely salad, Jac. I really like beans in salads for protein and satiety, and <3 your 'zingy' dressing to complement them. Because of my nutrition workshops I make A LOT of salads, even in winter (not lettucey ones though!). Thanks for including one of mine in the line up. I tried to comment when you posted this but I was on the Kindle and your set-up doesn't like Kindles! Sorry for the delay. Enjoy today's cooler temps. We have a light mist over here in Edinburgh!

      We had thick haar coming in off the sea yesterday. Cooper and I were at the park and it gradually disappeared around us. It made my hair curl up and frizz like mad. Nasty stuff!
