The Best Blended Soup (NCR)

I'm a little late in posting this, but I would like to share with you the winning soup in October's No Croutons Required.

We had a souper (haha) 18 entries, all so varied, tempting and colourful, and the voting was close, but in the end the winning soup was:

Recipe: Sweet Potato, Lime & Ginger Soup

Chef: Elizabeth
Blog: Elizabeth's Kitchen Diary
Location: Scotland, UK

Elizabeth served up this mashed sweet potatoes as part of her Thanksgiving meal and used the leftovers to create this beautiful soup. A rich soup full of garlic, ginger and coconut milk. It sounds glorious!

Congratulations Elizabeth, your winners badge will be making it's way to you today.

Lisa is hosting the November challenge and is asking for a vegetarian soup or salad inspired by another blogger. You can read all about it here.

Thank you to everyone who took part this month and I look forward to seeing next month's entries.

  4. Aw, thank you to everyone who voted for my soup! I really appreciate it. :) I detest food waste so I thought this was a great way to use up that leftover mash!
