How are you?

I was still tackling my tax return today, so I was a tad stressed. My friends may laugh when I say I was a little stressed, yes I was super stressed, but it's done now, phew! I hate hitting that button to see how much I owe. It's always more than I expect.

Now that's over, I'm thinking about the week ahead and some meal ideas. As usual there's lots of inspiration from all the recipes my lovely blogger friends share with me each week. I hope you'll be inspired too.

A No-Clean Juicer. WHAT??



You know I work with Froothie because I love their power blenders so much right? Well they have just blown up the world of juicers. It will never be the same again!

A new juicer you don't need to clean! It just happened!

A juicer that doesn't have to be taken apart and cleaned. A juicer that can juice in 90 seconds and that's it, no cleaning. WOW!

I'm so excited. I make a lot of smoothies, but my blender is my bit of kit for this as it's so easy to clean. My froothie juicer is easier to clean than most, but is still needs to be taken apart, cleaned and put back together. This new one doesn't.

How are you?

I was back at work today after my leg injury. It was a long tiring day but I got through it and it was lovely to see lots of friendly faces at work and everyone was so thoughtful knowing it was my first day back.

Dinner tonight was at our regular pub to give me a night off, but I'm home now, the wee one's in bed and I'm utterly exhausted. Tired or not,  I couldn't go to bed without sharing some delicious new vegetarian recipes for everyone to try this week. It may be called Meat Free Mondays, but any day meat free is a good one for your health and the health of your bank balance.

Easy Broccoli and Spinach Soup (5:2 Diet)



Sometimes I crave something green. I think it's my body telling me I'm lacking something in my diet. I really do believe our body tells us what we need, if we care to listen.

The green in this case is a luxurious broccoli and spinach soup.

It's the simplest thing to make and rather frugal too if you're watching your pennies this month. I know I am, especially with a tax return coming up. EEK!

Now my boys weren't overly keen. I think they go on high alert if anything is green. Cooper instantly decided he wouldn't like it, but with a bit of persuasion he ate most of the bowl. Graham ate two bowls of soup and said it was good but not his favourite. See what I mean?

I thought it was heavenly and just what I needed.

There are 4 ways to eat this gloriously green soup:

  1. Plain for a pure green hit.
  2. With a swirl of cream (or soya cream) for a touch of luxury.
  3. Topped with grated cheddar (or vegan cheddar).
  4. With a glug of cream and some grated cheese, BOOYAH!
I have to admit I love it with a slosh of cream and some grated cheese. Oh my it's good and feels slightly wicked.

This soup is definitely healthy. My body is very wise when I choose to listen to it.

Easy Broccoli and Spinach Soup
  • Low in saturated fat
  • High in dietary fibre
  • High in manganese
  • High in potassium
  • High in vitamin A
  • High in vitamin B6
  • Very high in vitamin C

Of course I did add to these calories by adding a grating of cheese and a splosh of cream, even if it was dairy free, but look at all those vitamins and minerals. 

Without the toppings this soup makes a great meal for the 5:2 diet. It will fill you up and leave you with enough calories left for dinner.

So if you're feeling a bit under the weather, if you have a cold or your body is just telling you that you need something green, then this is the soup for you.

Easy Broccoli and Spinach Soup
An easy broccoli and spinach soup. High in vitamins and nutrients but cheap to make. Only 145 calories and 38p per serving.
Ingredients
  • 1 tbsp olive oil
  • 1 large onion, finely chopped
  • 2 cloves of garlic, crushed
  • 2 stalks of celery, finely chopped
  • ½ courgette, chopped
  • 3 medium potatoes, chopped
  • large handful spinach
  • 2 heads broccoli, broken into florets
  • 1 ½ litre vegetable stock (4 stock cubes), add more water if required
  • a good grinding salt and black pepper
Instructions
1. Saute the onion, garlic and celery in a large pot with the olive oil until soft.2. Add the courgette, potatoes, spinach and broccoli.3. Pour in the stock and bring to the boil. Reduce to a simmer and cook for 20-25 minutes.4. Blend with a hand blender or in a stand blender then season and serve.5. Enjoy!

Happy Monday everyone. I hope your week has started well.

Mine hasn't! I'm totally fed up. I have been mostly bed bound for 11 days now with a damaged knee. I'm really over it now and just want to get back to normal. I'm up and about for a little while each day now, but my knee soon protests if I do too much. You may have noticed my blog has been rather quiet. Sigh!

Anyway enough of all that, it's Monday and that means I have a selection of new and utterly delicious vegetarian recipes to share with you.

It's the first Meat Free Mondays of the year and I'm excited to share some exciting new recipes with you. Have you had a good Christmas and New Year? Have you indulged I wonder? I know I have. I think January is going to be a bit more frugal food and drink wise, but not until I head back to work on Friday.
