Meat Free Mondays - 7 Recipes for the Week Ahead (6 March 2017)


Happy Monday!

And ....... welcome to another edition of Meat Free Mondays.

The week past has been a busy one as ever, with work, school and play. Cooper had great fun at school on World Book Day. He decided he would dress up as the superhero squirrel from one of his favourite books Flora and Ulysses by Kate DiCamillo. Needless to say I spent a fair few nights scratching my head as to how I could make a squirrel costume and then a few nights sewing (not my best skill). It worked out well and he had a really fun day.



Graham and I didn't have quite such a fun week, I had a family funeral, which was so sad and unexpected and poor Graham came down with gout (I know not what you'd expect from a vegan who doesn't drink, but there you go). We just have to carry on with a smile until we feel ourselves again.

I digress once more, so let's get back to the veggie recipes I'm delighted share with you this week. As usual it's a tasty selection and I hope the recipes inspire you as you plan your midweek meals.

And the squirrel outfit looks pretty good too, my own costume making days are thankfully over (my youngest child started high school this year). Thank you for featuring my recipe! I've just added my new salad recipe, which is actually more of a main dish.

  4. Thanks for including my cheesy enchiladas! Definitely need to put Mexican food back on the menu again this week, I can't get enough. Cooper looks so cute (and cheeky!) in his squirrel costume, you did a great job!

  5. So impressed by the squirrel costume! I got out of costume making this year as the kids were too sick to go in. Sending over my butternut squash and lentil lasagne this week, really want to try the oca recipe that Choclette posted.
