Meat Free Mondays - 7 Recipes for the Week Ahead (29 May 2017)

*UPDATE* at end of post

Happy Monday everyone. How are you and how was the start of your week?

Last week we were hitting between 26 and 28 degrees Celsius here in Scotland. The sun was splitting the pavements as we like to say, but now we're back to more familiar Scottish weather for May. Yup! It's raining and a little chilly.

I'm sitting in my conservatory typing this up. We just have a wee house so our conservatory which leads out from the kitchen and overlooks the garden is our dining room.

It's my favourite room in the house at the moment. In the winter it can be a bit chilly unless the door to the main house is open all day with the heating on, so it becomes a bit of a clothes drying area and is less used for dining.

It's now had a spring clean and we've replaced our dining table (the old one was too big) and hung floral bunting and fairy lights around the windows. It's looking very bonnie indeed. I'm sitting in the glow of the pink fairy lights listening to the pitter patter of the rain, but enough of all that. You'll be expecting some new recipes to tempt you for the week ahead and I aim to please.

    1. Yes I am hoping for more sunshine. I think we are due to get some here, but it will be cooler. You won't believe the bunny was sold as a gift tag accessory. I had to have him.

  5. Haha - I am currently very much enjoying the Scottish weather...today we've had everything from cold and rainy, to warm and sunny, and everything between! But it's all been quite perfect for sightseeing (i.e. neither chucking it down, nor roasting!) - besides it wouldn't feel quite right visiting Scotland and it being 28C...I want authentic weather! (I may regret saying that!!). We also have the same dining room/conservatory set up at home, which doubles up as my office - except last week I had to decamp into the living room to work as it was waaaay to hot - gah! Lovely roundup as always, but I am especially loving Nico's vegan Shakshuka - WOW!!

    1. I am so glad you are enjoying your Scottish trip. Pity we weren't closer as we could have met up for a cuppa and yes I know about the too hot and too cold days with a conservatory.

  7. Love the concept of Meat Free Mondays! The path to a better world is a "reducetarian" diet, where people eat less meat as Barbara Kings says in her new book. I totally believe in that and so am thrilled to submit a sumptuous spring salad recipe for your lineup!

  9. Thanks so much for including my salad and shakshuka - I really appreciate it. Those carrot dogs look fab... I'm so behind the times where they're concerned. I need to remedy that! xx
