Red Cabbage Coleslaw

I made some coleslaw tonight, as you have probably guessed! We had some on a baked potato with salad. It was really tasty! The ingredients were a symphony of colours before I added the dressing, so I am showing you a picture of that first.

Red Cabbage Coleslaw

1 baby red cabbage, sliced
2 large carrots, roughly grated
1/2 red onion, finely sliced
4 spring onions
1 green apple, sliced and tossed in the juice of 1/2 lemon
2 tbsp low fat mayonnaise
2 tsp wholegrain mustard
salt & pepper

Just mix everything together, not so much a recipe as a list of ingredients!

I'm looking forward to having some of the coleslaw on pitta bread with some halloumi cheese and salad leaves.

I'll be brushing the Halloumi with some Jerk Honey Glaze from Ruth's blog over at Once Upon a Feast

Unfortunately I haven't made this yet and it needs time to develop, so it will be a couple of days before I have that Halloumi. But who cares, the coleslaw will be even tastier by then!

  1. Whew, lookin' good! Never thought about putting apple into it! I adore the crunch of fresh slaw! Off to the Farmers Market in the morning. I wish you had one close! Or better yet, I wish you could join me. Back to ya soon!

  2. Hi WineDeb, The apples add a lovely sweetness to the coleslaw, which contrasts nicely with the mustard and lemon juice.

I wish I was coming with you to the Farmers Market, what a lovely day we would have. I will go with you virtually, if you tell me all about it. Lots of pics please!

  3. that picture looks so wonderfully colourful without the dressing - don't lot of vegetables make any meal look so pretty! I like the idea of your coleslaw with a haloumi with a jerk honey glaze - will check that out!

  4. Love all those colours together. Not a coleslaw fan at all but this is tempting.

  5. mmmm...I love halloumi! You have such great taste, Holler!

  6. Hi Johanna, you are right, vegetables add such beautiful colour to a dish!
I made the Jerked Honey Rum Glaze tonight, so hopefully it will be adorning some halloumi tomorrow! I think I subconsciously left the Rum part out, so as not to alarm Graham!

Hi Wendy, This coleslaw is not too creamy, thanks to the lemon juice! I sometimes feel coleslaw is too rich! Actually I think it would be good just with a lemon and mustard dressing.

    Thanks Jenn!

  7. that looks very yummy! and beautiful, as well!

  8. Hi Frannie, It is yummy, but I don't make it very often, usually barbecue time!

Hi Maya, glad you like the coleslaw. You could eat it without worrying, all that gym time, you dedicated person, you!

  9. Hi there - love your blog. You have a wonderful list of recipes to choose from.
