An easy, classic vegetarian bolognaise made with vegetarian mince, carrots, and mushrooms.
EASY VEGETARIAN BOLOGNAISE
Bolognaise or bolognese is usually a meat-based sauce, but this version is vegetarian.
Of course, there is no such recipe in Italy and you'll be very disappointed if you look for it on the menu there (unless you find a tourist restaurant)
The nearest recipe would be a ragu and in Italy, it is served with tagliatelle.
Here in the UK, it's usually served with spaghetti and I serve it that way too, but sometimes I like to serve it with penne.

HOW TO SERVE BOLOGNAISE
PASTA SHAPES
You can serve bolognaise with most pasta shapes.
It is good the Italian way with tagliatelle, the British way with spaghetti or mixed through macaroni for an American style meal that kids love.
LASAGNE
It's also makes amazing vegetarian lasagne.
In a large ovenproof dish layer the bolognaise between sheets of lasagne, top with a white sauce and mozzarella, then bake until golden and bubbling. I can guarantee you will love it.
CANNELLONI
You can also fill cannelloni tubes with bolognaise in a baking dish and top with a white or cheese sauce, then mozzarella and bake.
MAKE IT AHEAD
This is a great, cook-on-the-weekend and freeze-it option.
Handy after those late nights at work!
This bolognaise can be chilled in the fridge for 3-4 days or frozen in portions for 3-4 months.
To defrost, leave a portion in the fridge overnight, then reheat and serve.

Vegetarian Bolognaise

Ingredients
- 1 tbsp olive oil
- 1 large onion, finely chopped
- 1 large carrot, finely chopped
- 250g mushrooms, finely chopped
- 2 cloves garlic, finely chopped
- 200g/7 oz frozen vegetarian mince
- 1 pint /2.4 cups vegetable stock (3 stock cubes)
- 1 x 400g/ 14 oz tin chopped tomatoes
- 1 glass/175ml/0.7 cup red wine
- 100g/3.5 oz tomato puree
- 1 handful freshly torn basil
- a good grinding of salt and pepper
Instructions
- In a large pan saute the onion and garlic in the olive oil until soft and translucent.
- Add the carrots and cook until tender, then add the mushrooms and cook gently for a few more minutes.
- Add the soya mince and stir in well.
- Pour in the vegetable stock, chopped tomatoes and wine and stir in.
- Bring to the boil, then reduce to a gentle simmer and cook for 20 minutes.
- Add the tomato puree and simmer for another 10 minutes.
- Taste and season with salt & pepper.
- Scatter some torn basil into the sauce at the last minute.
- Serve with freshly cooked spaghetti or penne.
- Grate some veggie or vegan style parmesan over your dish before serving.

ReplyDeleteHi Hellojed, the sauce freezes really well, it is my freezer standby! Make sure if you use the soya mince, that you use it in a dish with lots of flavours like this, otherwise it can be a bit tastless.

ReplyDeleteSoya Mince is also known as TVP (textured vegetable protein, it is a meat substitute made from soya bean. Just adds a bit of texture really, although it is supposed to help in lowering cholestoral.
I like the look of your simple spag bol - and I think you are really lucky to have lots of vegetarian recipes handed down to you - so many of the recipes my family values from my childhood are meaty and I feel I have had to create some of my own versions of these when I feel nostalgic.
