Vegetable Soup to Warm the Old Cockles

This is a great winter soup, I make it thick, so it is more like a vegetable stew. It's is lovely with a chunk of crusty, buttered bread!

Vegetable Soup

Ingredients

I onion, chopped
1 clove garlic, chopped
4 large carrots, chopped
4 stalks of celery, chopped
3 potatoes, chopped
2 leeks, sliced,
1 turnip, chopped
2 pints vegetable stock
fresh herbs
salt and pepper

Method

  1. Fry the onion and garlic in a little olive oil until softened.
  2. Add the chopped vegetables and cook on low for 10 minutes, stir frequently.
  3. Add the vegetable stock and leave to simmer on a low heat for 30 minutes.
  4. Add fresh herbs and season with salt and pepper.

Serves 4-6

And it does warm the cockles of your heart! Especially if you sprinkle too much cayenne pepper on top!

  3. Nothing like a good thick vegetable soup for comfort as the days get colder and darker

  4. Vegetable soup sounds delicious! I just made some acorn, recently. I guess I should say, acorn squash. (Aren't acorns poisonous?)

I look forward to coming back and reading some more recipes. I love vegetarian cooking.

  6. It is definitely soup-making time Jenny!

Uh huh, Wendy, I could do with a few days in the sun, how about you?

Hi Johanna, This is an old favourite I make occaionally, but my favourite just now is butternut squash and carrot soup, made gorgeous by ginger, garlic and tumeric.

Hi Emiline, Thanks for visiting! I'm not familiar with acorn squash, I was wondering when you said you made acorn soup!

Yeah, it is a pot of basil Deb. It is my favourite herb, I love just to tear off a leaf or two to eat as I walk past it!

  7. Looks like the order of the day! I always like my soup so thick I can practically stand a spoon up in it, so this is perfect :-)

  9. Hit it with an immersion blender & you've got quite an elegant soup as well, rather than anything "rustic." Sounds yum!

  10. Hi Jen, My dad like to be able to stand his spoon up in custard as well as soup!

It is a family soup here too, Val!

Hi David, I prefer rustic soup, big chunks of veg, yum!
