Curried Chickpea Burgers
2 tbsp olive oil
1 red onion, finely chopped
1 stalk celery, finely chopped
1 clove garlic, finely chopped
1 carrot, peeled and grated
3 tsp curry paste (I used Patak's Cumin & Coriander)
2 tbsp water
400g can chickpeas, drained and rinsed
2 slices bread, whizzed into crumbs
2 handfuls cashew nuts
1 handful fresh coriander, chopped
black pepper
Heat the oil in a pan and saute the onion, celery and garlic for 5 minutes, add the curry paste and water and cook for another few minutes. Add the grated carrot and cook for two minutes. Season with pepper.
Mix together all the ingredients in a large bowl. Shape into burgers and put in the fridge for 30 minutes before frying in a little olive oil for a few minutes on each side.
Makes 8 burgers
Serve in a burger bun with salad leaves and mustard.
I made 8 burgers, well when I say burgers, they actually fell apart. So they weren't so much burgers, but more a burger crumble! I am thinking of adding a beaten egg next time.
I had some mixture left over and it was just too tasty to discard. So I grated a carrot and some cheddar into the mixture, added a dollop of mayonnaise and mixed together. I filled soft tortilla wraps with this gorgeous filling along with some salad leaves. Voila, lunch for tomorrow! Should be good :)

This type of thing happens to me all the time with veggie burgers! I think I'd like them as a tortilla filling even better. . .but the mix of ingredients does sound yummy.

They totally fell apart, Wendy :( They were ok until I tried to turn them. I may need some practise! But as my mum would say, it will be broken where it's going!

ReplyDeleteI bet they would hold together just fine if you ground or chopped the cashews and mashed the chickpeas, the mashed chickpeas would act as a binder.
ReplyDeleteApparently some of us are in-sync with our cooking, I just visited a blog that made a kidney bean burger and I just posted about black bean "cakes".
I think a curried chickpea burger sounds delicious and it could also be morphed into a savory nut roast or "bean balls", that is what I love about this type of recipe.
Hey Holler, I really need to try cooking with chickpeas more often, I've just not had much experience either eating or preparing them.

ReplyDeleteYep, the egg will do it on keeping things together and also you may try smashing up some of the chickpeas as a binder!

ReplyDeleteI just happened to cook up a bag of chickpeas today, and I can't wait to make these! I'll add a beaten egg white to bind, and since I don't have sandwich rolls I'll serve the burgers in wheat pitas instead.

Mmm those wraps look so good! I need to make that sort of thing. I love trying out different vegetarian "burgers" but they tend to not stay together too well. Though they are usually delicious!

Holler, I made these and they will definitely be a repeater over this summer! I played with the recipe a bit, but it's basically as you posted. Adding the egg worked-- they didn't crumble up at all. :)
