Quinoa, Lentil & Bean Salad




This was a quickly thrown together dish for dinner tonight, just using what I had to hand. It was a hearty salad with a lovely fresh dressing and lots of lush green coriander.



Quinoa, Lentil & Bean Salad

Ingredients

250g prepared black beluga lentils
250g prepared quinoa
240g prepared kidney beans
2 large ripe tomatoes, diced
2 large avocadoes, diced
1 large handful fresh coriander, chopped


Dressing

juice of ½ lime
6 tbsp olive oil
2 tbsp balsamic vinegar
2 tbsp wholegrain mustard
1 tsp dried chilli flakes
freshly ground black pepper


Method

There's not much in the way of preparation. Toss the avocado in some lime juice before adding to the salad, to prevent it from browning. Apart from that is just one of those salads, where you throw everything in and then toss in the dressing.

Serves 6

  6. I've never really tried beluga lentils. Are they easily available? Are they the ones that Indians use in Dal Makhni?

    The pic looks so fresh!

  10. I thought of buying quinoa at the wholefoods shop this week but they were sold out - must have been because of the weekend article in a local newspaper

    This salad looks lovely - though I would probably omit the coriander. I haven't got an entry for NCR this month - very sorry not to participate but life has been too crazy for mexican creations - will try harder next month!!!

  20. It was good Juliana. Not so good second day. I don't think avocadoes like a prolonged stay in the fridge, so I think I will add this to individual bowls apon serving next time.

Omg I cyber-bumped into your blog 20 minutes ago looking for a Carrot and Celery soup recipe, I am not much of a cook at all neither do I usually enjoy cooking but I have already seen 5 recipes that I cant wait to make! (this Quinoa salad - hubby and I love Quinoa; Carrot Cake - hubby loves 'em; Scottish Macaroons - I love 'em, hubby will too for sure; Carrot and Celery soup - yum!; and that heavenly looking Conchiglioni Al Forno). Mind you this is only after 20 min on your fantastic website. Awesome work and thank you so much really.
