CAPRESE SALAD WITH CHILLI AND LIME
We're not getting much of a Summer here in Scotland, but I'm enjoying a lot of salads and one of my favourites is a caprese salad.
I usually treat it to a drizzle of a balsamic and mustard dressing, this time I made a chilli speckled dressing.
Milky slices if fresh mozzarella, slices of ripe, juicy tomato, a sprinkling of basil leaves and a drizzle of my chilli & lime dressing.
Mmmmmmmm!
CHILLI AND LIME DRESSING
The chilli and lime dressing is super simple and quick to make.
Just add all the ingredients to a small bowl or glass and whisk together until well combined, then add to your favourite salad.
You can make extra dressing and keep it in the fridge for a few days until you need it again.

Chilli & Lime Dressing

Ingredients
- 1 tsp chilli flakes
- finely grated peel of 1 lime
- freshly squeezed juice of ½ lime
- 1 tsp honey
- 4 tbsp olive oil
- freshly ground black pepper
Instructions
Simply whisk all the ingredients in a bowl and season with black pepper. Taste and adjust to your own liking. You can add more or less of any of the ingredients.

Anything with lime works for me - and as we are having such good weather here at the moment a salad with this dressing would be perfect :)

ReplyDeleteLove to add spice to traditional well known dishes, and always but always have lime on hand. Here in South Florida we have an abundance of lime, all year round. So affordable...sometimes you can buy a dozen for $1.00!

A bit of heat is what we need, indeed..What is going on with the weather here!? Not a very nice welcome having just arrived back in London from Tarifa. I'm freezing; think I will need to drink this dressing with extra chilli added to warm up!
