March has arrived, the sun is shining and everyone is feeling a bit more cheery. I noticed a difference in the entries for this month's No Croutons Required too, more salads are starting to appear as people shrug of the Winter.
No Croutons Required is now open to all veggie soups and salads, so there is a great variety of dishes. They are a bit late in going up, but I do hope you enjoy them. Remember to head over to Lisa's Kitchen where the March No Croutons Required will open later today.

Jeanne paired carrots with cumin in this creamy soup.
Jeanne became intrigued with spices as a child. Her mother had a Danish Digsmed spice wheel which she and her brother were fascinated with as children. She remembers smelling the cumin, but doesn't remember her mother cooking with it. Jeanne uses it in her soup to bring a warmth to the sweet flavour of the carrots.

Janet always comes up with something different and I hadn't heard of this soupy stew before.
Poor Janet has two sprained knees, no don't ask, but she still managed to throw together this stew. It's ingredients are said to be anti-inflammatory, so just what poor Janet needs. A warming soup filled with cabbage, mushrooms, garlic and tofu. Kimchi, pickled napa cabbage.

What a gorgeous colour! Don't you just want to dive in?
Janie wasn't so sure when she made it. It all sounded so good in her head, parsnips, sweet potato and honey. As she was pouring it she did wonder f it would be too sweet, but with the hint of chilli, it was divine.
I am definitely going to try this. Roasting root veg is such a good idea for adding a depth of flavour to soups.

Poor Lisa hasn't been well, so soup it had to be. Lisa made this soup with Thai reed curry paste as the base. Never made your own? Lisa will show you how and you can store it in a sealed jar for a month or so. To the paste she added dried wild mushrooms, cauliflower, tomatoes, green beans, oyster mushrooms and bean sprouts as well as spices and coconut milk.

Lightly cooked beans, still with a crunch, coated in some fresh mustardy salad dressing and finished off with sesame seeds.

In Kenya pumpkin is more often used to make curries, or cooked with kale and coconut or cooked into a dry vegetable to accompany a meat dish, but Mayuri decided she would use it to make soup. First she roasted the pumpkin and then she added cumin seeds and dried herbs for flavour. She finished off her soup with a topping of fresh salsa, which is a really lovely idea.

A smooth blended soup of celeriac, carrots and lemon thyme. A simple but delicious soup finished off with a dollop of Greek yoghurt and a sprinkling of fresh lemon thyme. Slurp!

Snow struck and Gayathri was at home for two days with her hubby and three children. At a loss for something to do she cooked and cooked and cooked. One of the dishes she whipped up was this dal.
I love dal and make it almost weekly but I've never added cranberries, so that is food for thought. Gayathri served her dal with rice and a topping of cucumber and spring onions. Doesn't it look droolworthy?

I've never thought of having tomatoes and carrot as the main ingredients of soup, but it looks absolutely delicious. All finished off with a swirl of cream, creme fraiche or Greek yoghurt on the top. Bookmarked!!!!

During her undergraduate degree, Sarah spent a semester in Budapest, Hungary, where her friendly neighbour taught her to cook traditional Hungarian dishes including this Paprikash. So it brings back warm memories for her. A spiced mushrooms soup topped with more mushrooms and little grain free dumplings. Just stunning!
