11 Soups and Salads to Try from this Month's No Croutons Required

It's time for a roundup up of all the recipes submitted to this April's No Croutons Required and we start of with this delicious looking Cheesy Cauliflower and Rice Soup (vegan) from Johanna over at Green Gourmet Giraffe.

Next up we have a gloriously colourful Parsnip, Carrot and Mango Chutney Soup from Linzi over at Lancashire Food and Pasta & Cannelini Bean Soup with Mini Aubergine ‘Pizzas’ from Helen over at Family Friends Food. Good idea Helen!

Our last soup is this gorgeous Wild Garlic, Lemon & Chickpea Minestrone from Jenny over at Mummy Mishaps. I do love a thick stew-like soup like this one and chickpeas are always a winner in my book!

Our salad section starts with this pretty Mexican Inspired Pasta Salad from Shaheen over at Allotment 2 Kitchen. I love pasta salads and my boys love corn, so this is definitely on my to-make list.

Lata Raja from Flavours and Tastes  made us a In-Between-Meals Salad with Vinaigrette Dressing. If you are going to eat between meals, this would be the ideal option. Far healthier than a cake or biscuit.

Dena from Oh! You Cook! brought us a simple Carrot Slaw with Citrus Vinaigrette instead of the usual calorie-laden mayonnaise dressing and Janet from The Taste Space made us a Southwestern Avocado Scramble Salad, which looks like a really filling and tasty salad. Oh and Janet has also posted one of her wedding photos. Congratulation Janet!

Get your colour on with these two tempting salads. Chardonnay and Samphire made a Super Grain Salad with Smoky Hummus for our delectation and my good buddy Lisa over at Lisa's Kitchen cooked up some Mexican-Style Mung Bean Tostadas. Yum!

I will finish off with my own contribution Bulgur Wheat, Couscous and Puy Lentil Salad.

  5. I'm always up for a good bowl of soup especially when it's as miserable outside as it is here at the moment. Keep forgetting I can enter this now - I have a big pan of nettle soup on the go at the moment.

  7. I am such a soup and salad fan, especially at lunchtime. I think your bulgur, cous cous and lentil salad wins me over the most though!
