
I've been playing about with Baxter's Deli Toppers a lot lately.
There are four flavours in the range, Red Slaw, Spicy Slaw, Red Onions and Jalapenos. They're all in vinegar with spices and are a really convenient way to perk up dishes with a bit of zing. I've been adding them to sandwiches, wraps, baked potatoes and as a topping for burgers. Today I thought I would share some ideas for the Red Onion Deli Topper and some recipes.
10 Red Onion Hacks
- Spread ready-rolled puff pastry with onion marmalade, leaving a border, then top with slices of goats cheese, a sprinkling of fresh (or dried) thyme and season with black pepper. Bake until golden, then top with Baxters Red Onion Deli Topper for a bit of zing.
- Cut thick slices of crusty bread, lightly toast and rub with a cut clove of garlic, then top with some pesto, slices of tomato, fresh mozzarella and red onion deli topper.
- Grill or fry veggie sausages until good and brown, then serve in finger rolls (inside toasted), spread with hummus then top with red onion deli topper.
- Roasted cheese (cheddar melted on toast) needs lots of black pepper, but try adding red onion deli topper to take it to another level.
- When you are serving load-your-own fajitas, serve with bowls of red onion deli topper, salsa, guacamole & grated cheddar (or vegan cheddar).
- Loaded nachos are a great sharing plate. Load them with all the same toppings as the fajitas and add some black beans then grill until hot and crisp and the cheese (or vegan cheese) is gooey.
- A simple dish I'm enjoying is a baked potato well seasoned and topped with cottage cheese and red onion deli topper.
- Make a basic tomato sauce with chilli in a large, deep frying pan. Break eggs into the sauce and cook gently until the egg is cooked, but the yolk is runny, then top with red onion deli topper and serve in the pan at the table with crusty bread for Sunday brunch.
- Load up some hummus for a starter. Spread a thick player of hummus on a plate. Drizzle with olive oil, top with cooked chickpeas, fresh coriander, a sprinkle of cayenne pepper or paprika and a scattering of red onion deli topper. Serve with crusty bread as a sharing platter.
- Caprese salad also benefits from a zing of red onion deli topper, slices of beef tomatoes layered with fresh mozzarella and topped with fresh basil and red onion and drizzled with a balsamic vinegar and mustard dressing.

DeleteI love the Deli Toppers and also love all these delicious and inventive ideas to use up that jar in the fridge. Of course as soon as you use it up it then needs replacing!
