ROAST VEGETABLE AND HUMMUS BLONDE PIZZA


I had you at pizza didn't I?

If you're anything like us you love pizza. 

Our standard choice is a Margherita pizza.

We usually pile it high with added veggies. 

We like to add mushrooms, onions, tomatoes and peppers. sometimes we will add sundried tomatoes or olives or we might at fresh rocket (arugula) when it is out of the oven.

This time we decided to try something different and went for a blonde pizza.


WHAT IS A BLONDE PIZZA?


A blond pizza is a pizza that has a white or pale coloured sauce or dressing instead of the more traditional tomato sauce.

It is also known as a Blond Pizza, a White Pizza or if you want to get all Italian, a Pizza Bianca.

The base of a blond pizza might be coated with:

  1. Olive oil
  2. Flavoured oil
  3. Pesto
  4. Ricotta
  5. Parmesan
  6. Mozzarella
  7. Cream Cheese
  8. Hummus
  9. White sauce
Of course, not all of those options are classically Italian, but they all work well.


IDEAS FOR A BLONDE PIZZA


Here are a few ideas for a blonde pizza:

  1. Pizza dough brushed with olive oil and topped with mozzarella (vegetarian or vegan), slices of courgette, slices of artichoke (jarred in oil) and spinach.
  2. Pizza dough topped with a white sauce, bechamel style (veggie or vegan), sauteed garlic mushrooms, topped with rocket (when removed from the oven.
  3. Pizza dough topped with a white sauce, topped with spinach, caramelised onions and pine nuts.
  4. Pizza dough topped with pesto, roast vegetables, sundried tomatoes, then when cooked topped with fresh rocket (arugula) and crumbled feta (vegetarian or vegan).
  5. Pizza dough topped with cream cheese, courgette, peas and spinach, drizzles with chilli oil.

HOMEMADE PIZZA DOUGH


Homemade pizza dough is great fun to make and made with a few basic ingredients.

Strong white flour, olive oil, yeast, water, a little sugar and salt.

You do need to plan ahead as it needs time to rise, be knocked back and rise again.

SHOP-BOUGHT PIZZA DOUGH


If you are short of time, you could also buy shop-bought pizza dough.

Look for it in the chilled aisle of your supermarket next to the cardboard tubes of pastry.

It's actually really good quality and saves a lot of time.

It gives you a fresh pizza dough finish but lets you fully customise your pizza.

Roast Vegetable and Hummus Blonde Pizza

Roast Vegetable and Hummus Blonde Pizza

A homemade white pizza with hummus in instead of tomato sauce, roast vegetables, herbs and spices.
Prep time: 10 MinCook time: 35 MinTotal time: 45 Min

Ingredients

  • 2 yellow bell peppers, cut into chunks
  • 2 small courgettes (zucchini), sliced
  • 2 red onions, halved and cut into wedges
  • a drizzle of olive oil
  • 1 portion pizza dough (see ideas in notes for alternative pizza bases)
  • 300g/10 oz hummus
  • 2 ripe salad tomatoes, cut into wedges
  • 1 tsp dried oregano
  • a generous pinch of paprika
  • a good grinding of black pepper
  • a few sprigs of fresh coriander to serve

Instructions

  1. Heat oven to 240C/fan 220C /gas 8.
  2. Toss the vegetables in a little oil and spread across a roasting tin, then roast for 20 minutes.
  3. Roll out the dough into two bases and place on two floured baking trays.
  4. Spread hummus across each base, leaving a border.
  5. Top with the vegetables and tomatoes and sprinkle some oregano and paprika across each pizza, then season with black pepper. Finish with a drizzle of oil.
  6. Bake for 12 - 15 minutes until golden and crisp.
  7. Enjoy!

Notes:

I lightly roasted the vegetables, but you can cook them for longer if you prefer them more charred.


Instead of hummus, you could use cream cheese mixed with herbs as a sauce.

  5. Homemade pizza is soooo good! I'm a vegan and haven't found the perfect melting cheese yet.I bung pesto on mine on the base or sundried tomato paste, never thought of hunnus.Defo a whole pizza to myself with salad, using a knife and fork.

    1. Violife do a fairly good mozzarella that melts well. It's made from coconut milk. The one pizza express uses is really good, I can't remember the name of the one they use, but if I remember I will let you know. Yes to the whole pizza and fork and knife.

  6. we made pizza a lot - E and I usually share one and we had a brussel sprouts one that worked well - I have been meaning to try hummus on a pizza but have felt unsure so this recipe will come in handy

  12. Great idea to use hummus on pizza - I can't wait to try it! I agree, blunt knives are the worst. I love my sharp ones (including some Robert Welch!), so it's annoying to go to someone's house or a holiday home and be faced with blunt ones.
