Spicy bean wraps, mmmmmmm! Don't they look good? Believe me, you're going to love these.

I do like a wrap as a change from sandwiches. From falafel wraps to veggie sausage wraps

This wrap is a copycat recipe or fakeaway (homemade copy of takeaway food) as they are sometimes called. It's my version of a Tesco wrap that I'm rather addicted to.

You may know I've shared vegan recipes for the last few years, but my son and I are still vegetarian. My husband is vegan, so we mostly eat vegan. It's just easier isn't it and so delicious.

Copycat Lunchtime Wrap


This is a wrap I often buy at lunchtime when I'm at work. I'm totally addicted to it. There's salad, lots of beans. the creaminess of cream cheese, the flavour from cheddar and a kick from a spicy tomato sauce. I thought Graham would enjoy it and it was a shame they didn't do a vegan version, so I decided to create a vegan version at home. 

If you're vegetarian feel free to use a strong cheddar and your favourite cream cheese. You can do this with pretty much all my recipes. Choose if you are making them to suit a vegetarian diet or a vegan diet. I'm giving you the idea and recipe, you just need to decide if you are using dairy or dairy-free.

I don't believe in artificial vegan ingredients. Cook with fresh ingredients and make simple swaps for a vegan diet.

Simple Vegan Swaps


butter = dairy free spread
milk = almond milk
cheddar = vegan cheddar 
cream cheese = vegan cream cheese
veggie style Parmesan = vegan style parmesan
eggs = flax eggs (1 tbsp ground flaxseeds & 3 tbsp water left in the fridge to thicken for each egg)

That's pretty much it, really simple swaps with products that taste good and aren't artificial to perk up your meals. Apart from these swaps most of our meals are vegetable or bean based anyway.

Really simple ingredients and recipes, that taste great.

Spicy Bean Lunch Wrap


So back to the wrap. I basically picked up one of the Tesco spicy bean wraps and had a look at the ingredients. 

Black turtle beans - tick
Borlotti beans - tick
Spiced tomato sauce - I used a spicy salsa, the original sauce tastes like salsa
Full fat soft cheese - I used Violife Creamy
Lettuce - tick
Mature cheddar - I used Violife cheddar
Red pepper - tick
Mayonnaise - skipped this, cream cheese is enough
Tomato wrap - I used a wheat and white tortilla wrap

The result was very close to the flavours of the original. Super tasty and a new favourite to make at home in minutes. I do hope you try it.

Spicy Bean Lunch Wrap

A delicious spicy bean wrap, both creamy and tomato spicy. A very, very addictive lunchtime sandwich wrap.
prep time: 10 minscook time: total time: 10 mins

ingredients


  • 1 large flour tortilla
  • 2 heaped tbsp cream cheese (veggie or vegan)
  • 1 large handful of salad leaves
  • 1 few thin strips of red pepper
  • 3 tbsp of cooked mixed beans (I used black turtle beans & borlotti beans)
  • 2 heaped tbsp hot salsa
  • a handful of grated cheddar (veggie or vegan)

instructions


  1. Spread the tortilla with the cream
    cheese, leaving a border around the edge.
  2. Spread the salad leaves and slices of pepper in a line across the middle of the tortilla.
  3. Top the salad leaves with the beans, salsa and grated cheese.
  4. Tuck the sides in and roll the tortilla towards you over the filling firmly, folding in the edges as you go.
  5. Cut the filled tortilla in half and serve.
  6. Enjoy!

  6. I do love a good wrap, and this looks so filling and delicious.

    I'm not keen on the Violife cheddar - although it is definitely one of the better ones out there - but the Creamy is great. Especially with Marmite on crackers or filling a stick of celery! It also goes really well with sweet chilli sauce. Yum!

    Now my tummy is rumbling! xx

    1. Thanks Johanna, it's really good. I was happy to cook vegan for Graham and for us once I realised it was easier than I thought and when I realised so many of our recipes are vegan already or simple to tweak.
