The sandwich queen is back!

I do love a homemade sandwich or wrap. They are always so fresh and full of flavour. The crunch is still there and everything hasn't gone soft or a bit soggy as bought wraps can.

This has a colourful punch of flavours, all ready to be wrapped, cut and enjoyed.

Salad Wrap Filling


I spread flour tortilla wraps with pesto, topped it with fresh salad and halved pickled baby beets for that extra zing of flavour.

Wraps


Wheat and white wraps from Mission Deli are our family favourite. I never use their wholewheat ones as I really don't like them and I stopped buying supermarket wraps as they tended to be a bit claggy.

If you're on a budget, do try the supermarket brands to find the best or look out for special offers.

Pesto


Homemade pesto is something I make occasionally, but I make sure my store cupboard has jars of ready made pesto for convenience.

I like Sacla Free From Pesto which is suitable for dairy-free and vegan diets, but just as good as the original pesto. I also like Mr Organic Pesto.

Salad Leaves


I used rocket leaves in this wrap, which are called arugula in the US, for their peppery flavour.

Cherry Tomatoes


Tomatoes have to be rich red, ripe and full of flavour. If there is one thing I think it is better to spend extra on it is tomatoes, as the difference between a good tomato and a bad tomato is extreme.

Cucumber


Just buy one and slice it, but do make sure it's firm when you buy it.

Sweetcorn


From time to time I buy cheap supermarket sweetcorn, which I always regret. You really can't beat Green Giant Sweetcorn.

Baby Beets


I am brand loyal with these too, I have tried many brands and only one will do. Pickled baby beets have to be Baxters baby beets.


Of course you may not get these brands if you live outside the UK. Buy your normal brands, but do pay a little extra for the tomatoes and make sure the tortillas are good quality.

Oh and I'm not working with any of these companies, I just like to pass recommendations to my readers.



Which type of tomatoes are best to buy?


When buying tomatoes you should look for a deep red colour and a firm tomato.

For the best flavour buy organic tomatoes. They are more expensive, but well worth the price for that real tomato flavour. So many tomatoes are bland and flavourless.

If you're given tomatoes from someone's garden or greenhouse, even better.


How to store tomatoes


Large salad tomatoes or beef tomatoes should be stored at room temperature. 

I keep my tomatoes on a bowl on the kitchen window sill, where they darken as they ripen and the flavour improves as they sit there.

Cherry, baby plum tomatoes and other miniature varieties should be kept in the fridge as they don't last long at room temperature, but take them out of the fridge and leave them out for a little while before using them so they lose the chill for the best flavour.

Summer Salad & Baby Beet Wrap
Yield: 1 wrap

A colourful, fresh salad lunch wrap with baby beets and pesto.

ingredients:

  • 1 flour tortilla wrap
  • 1 tbsp dairy-free pesto
  • 15g/ 1 large handful rocket (arugula)
  • 6 slices of cucumber
  • 4 cherry tomatoes, halved
  • 1 heaped tbsp sweetcorn
  • 3 baby beets

instructions:

  1. Spread the tortilla with the pesto, leaving a border around the edge. This makes it less messy as it's less likely to leak.
  2. Top with rocket, cucumber and tomatoes on one side of the wrap, leaving a good space around the edge.
  3. Pat the excess vinegar from the baby beets, halve and add to the wrap along with the sweetcorn.
  4. Wrap the sides of the wrap over the filling a little, lift the top of the wrap over and roll towards you.
  5. Cut in half and serve.
  6. Enjoy!

  7. I tend to go through phases with sandwiches. I couldn't get enough of my mushroom pate for ages, but I've gone off that one now. Now I've read this, I should have something to keep me going for a long time to come. So many delicious sandwiches.
