WHAT ARE OVERNIGHT OATS?


Overnight oats are oats soaked in liquid, usually milk, yoghurt or a combination of the two. 

They are prepared in the evening, chilled overnight and ready to eat the next morning.

Unlike porridge, overnight oats are designed to be eaten cold.

They can be made with dairy or plant-based milk and yoghurt and served plain or perked up with other flavours and fruit into something a bit more special.


WHAT KIND OF OATS ARE OVERNIGHT OATS MADE WITH?


Overnight oats are best made with porridge oats, which are also known as rolled oats.

Oatmeal or quick oats are too fine and jumbo oats are too coarse. 

Yes it is a bit like Goldilocks and the three bears, the porridge oats are just right!

I use Hamlyn's of Scotland oats for breakfast and in my recipes.

Hamlyns are a family business who have been milling premium Scottish oats since 1888 and their products are sold in all good supermarkets.

They mill porridge oats, porridge oats with bran (10% wheatbran added), oatmeal and pinhead oatmeal.

HERE'S WHAT YOU NEED TO MAKE BLUEBERRY MUFFIN OVERNIGHT OATS


  1. Oats - choose porridge oats, also called rolled oats.
  2. Milk - this can be dairy or plant-based.
  3. Yoghurt - this can be dairy or plant-based.
  4. Blueberries - you can use fresh or frozen berries to make these overnight overnight oats.
  5. Demerara Sugar - this helps to give you that comforting muffin flavour.
  6. Ground Cinnamon - another blueberry muffin flavour. If you have cinnamon sticks you can finely grate them instead of using ground cinnamon.
  7. Vanilla Extract - never, ever, ever use vanilla essence. It is an abomination and tastes disgusting.
  8. Salt - just a pinch.


HOW LONG WILL OVERNIGHT OATS KEEP IN THE FRIDGE?


Overnight oats can chill in the fridge happily for 3-4 days.

If you add banana they can start to discolour. You wouldn't want to keep overnight oats with banana more than a couple of days.

Of course if you add slices of banana or mashed banana in the morning when you are serving the oats, you won't have that problem.


HOW TO SERVE OVERNIGHT OATS


Overnight oats can be served in a glass, a jar or a bowl.

If you head over to Pinterest, you will see jar after jar of overnight oats and they do look bonnie, but believe me it is tricky to eat out of those jars.

The trick to eating overnight oats out of a jar is to only half or three-quarter fill them, then use a long dessert spoon to eat them.


WHAT TOPPINGS ARE GOOD ON OVERNIGHT OATS?


You can serve overnight oats plain, but it's quite nice to give them a bit of pizzazz and add some toppings. 

Here are a few overnight oats topping ideas:


  1. Oats toasted in a dry pan with a little maple syrup
  2. Muesli
  3. Yoghurt
  4. Chopped nuts
  5. Jam
  6. Fresh fruit
  7. Dried fruit
  8. Chocolate chips
  9. Whipped cream and a dusting of cocoa
  10. Peanut butter (or any other nut butter)
  11. Seeds
  12.  Ground cinnamon or ginger (just a pinch)

Measure your oats into a large bowl. Remember porridge oats (or rolled oats) are best for overnight oats

Demerara sugar gives that lovely caramel flavour of a blueberry muffin. If you don't have demerara, you could use a different brown sugar. Caster won't give that muffin flavour.

Next add another important flavour of blueberry muffins and that is cinnamon. Add ground cinnamon or fresh ground cinnamon stick.

Add vanilla to help along the sponge cake flavour and yoghurt to add a luxurious creaminess.

The next ingredients to add to the basic recipe is a pinch of salt and some milk. The milk can be dairy or plant-based.

Mix well so all the ingredients are well blended.

Now add fresh blueberries and mix. 

Divide the oats between 2 glasses or jars and top with a dollop of yoghurt and some more fresh blueberries and chill in the fridge until required.

ingredients:

Overnight Oats
  • 100g Hamlyn’s Porridge Oats
  • 1 heaped tbsp demerara sugar
  • 1 tsp ground cinnamon
  • ½ tsp vanilla extract
  • A pinch of salt
  • 200ml milk
  • 2 tbsp yoghurt (vegan or dairy)
  • 200g fresh blueberries
Toppings (optional)
  • 2-4 tbsp yoghurt
  • 2 tbsp fresh blueberries

How to cook Blueberry Muffin Overnight Oats

  1. Pour the overnight oats ingredients into a bowl and mix well.
  2. Decant the oats into two short glasses or two small jars, cover with clingfilm and leave in the fridge overnight.
  3. In the morning, remove the film, give the oats a stir (if you feel they need a little more milk, you can add it now), top with yoghurt and blueberries (this is optional) and serve.
  4. Enjoy!

NOTES:

The overnight oats can be kept in the fridge for 3-4 days.
You may use frozen berries instead of fresh.
If you don't like cinnamon, try a little ground ginger instead.
