Easy Microwave Jam Sponge Pudding

An easy jam pudding made in a mug and cooked in the microwave in just 2 minutes.

JAM PUDDING


Jam pudding is a good old-fashioned British pudding. It's usually served hot with hot custard or vanilla ice cream

The normal way to cook it is in a large pudding bowl or smaller pudding basins, covered with foil and baked in a water filled roasting pan in the oven. They are steamed as well as baked.

They can take anything from 45 minutes to 1 ½ hours.

My jam pudding takes 2 minutes to bake!



EASY MICROWAVE JAM SPONGE PUDDING


Two minutes to cook, yep that's it!

Two minutes and you have the most fluffy, soft sponge with a jam centre.

Divine!

Oh and you can mix it in the mug or a separate bowl.

If you mix it in the mug, which is what we normally do, then you only have a spoon, measuring spoons and a mug to wash afterwards.

Compare that with washing up a mixing bowl, measuring spoons and cups or scales, a roasting pan, pudding basins, serving bowls and spoons and after all that clear up it takes over an hour to bake.

JAM SPONGE PUDDING


This is my husband's favourite mug cake.

After I made if for him the first time, he asked for it constantly.

I had to remind him it wouldn't be a good idea to get into the habit of having pudding every day.

So he took things into his own hands, got all the ingredients he thought would be in it and asked me for the recipe then made it himself.

Of course he declared his the best he'd had yet. Cheeky toad!

HUSBAND-PROOF RECIPE



My mum has become part of our bubble (if you're reading this beyond 2020, just google the year and you'll soon know what I'm talking about), so me and the wee boy went to stay with her for a few days over the weekend. 

It was the first time seeing her for months. It was wonderful!

My husband was working and looking after the dogs, so happy to stay home, but what was his one concern?

Yep, that I was taking the sponge pudding recipe with me.

My husband isn't one for baking or cooking, so it's a strange thing to see him going into the kitchen, getting baking ingredients out and making himself a pudding.

He loves this recipe!

You'll see from the photo of my fridge above that I left him the recipe along with a warning not to eat it every night.

10 TIPS FOR MAKING MICROWAVE JAM PUDDING


  1. Use a large mug, not a smaller tea cup. I mean you can try the smaller tea cup, but you might find half the pudding decorating your microwave. A good size mug or cup, that you might serve soup in is best.
  2. Adding sprinkles is always a good idea, but they are optional.
  3. If you're going to tip it onto a dessert plate or a bowl to serve, grease the mug first before adding ingredients and when it's ready, loosen the edges with a knife.
  4. You can mix the batter in the mug, add the jam at the end and push it under the batter (less dishes).
  5. Microwaves vary, your pudding may take a little less or a little more time to cook.
  6. You can add your favourite jam, any flavour.
  7. You could vary the pudding and add a dollop of chocolate spread, some peanut butter or some lemon curd instead of jam.
  8. You know your pudding is done when it is soft and springy to the touch, but no cake batter sticks to your fingertip.
  9. If it seems a little dry, cook it for less time next time.
  10. When you touch the top, if batter sticks to your finger in needs a little longer.

WHAT YOU NEED TO MAKE MICROWAVE JAM SPONGE PUDDING


  • a mug - a decent sized mug
  • measuring spoons - there's not a great deal of weight in the ingredients, it's a small portion
  • a spoon - for stirring

  • plain flour - you can use self-raising flour instead, a pinch of baking powder will give extra rise but isn't essential
  • caster sugar - you can use brown sugar but it will colour your sponge
  • baking powder - for rise
  • salt - just a pinch
  • milk - dairy-free or dairy, just use what you have in the fridge
  • oil - choose a plain or mild oil
  • vanilla extract - never essence, it's just plain nasty
  • jam - your favourite flavour
  • sprinkles - optional

HOW TO SERVE JAM PUDDING


  • as it is
  • with extra jam on top
  • topped with a dollop of vanilla ice cream
  • served in a bowl with custard
  • topped with some squirty cream

HOW TO MAKE MICROWAVE JAM SPONGE PUDDING

Making Microwave Jam Sponge Pudding - Step 1 - Dry ingredients - flour, baking powder, sugar, salt and sprinkles (in yellow bowl)
STEP 1 - DRY INGREDIENTS

You can make the sponge batter in the mug itself or in a small bowl.

First add the dry ingredients - the flour, baking powder, sugar, salt and sprinkles if you are adding them.

STEP 2 - WET INGREDIENTS

Give the dry ingredients a mix to combine, then add the milk and oil.

Add the vanilla and mix the cake batter until smooth.

Add jam to your mug.

If you're mixing up the batter in the mug itself, just add a dollop of jam at the end and push into the cake batter so it is covered with batter.

STEP 5 - SPRINKLES

If you mixed the cake batter in bowl, add it to the mug, covering the jam. If you mixed that batter in the mug, you're at this step already.

Top with a few extra sprinkles.

STEP 6 - MICROWAVE

Pop in the microwave and cook for 2 minutes. When it's ready the surface of the sponge should be springy to the touch but you shouldn't have any wet batter on your finger tip.

Your microwave may be more or less powerful than mine (800w class E), so your cake may need a little less or more time. 

Stop it before the 2 minutes to do the fingertip test, if it needs more give it little bursts of power. 

Once you know the right time for your microwave you can make it that may each time. It should be roughly 2 minutes.

I recommend serving it with little dollops of ice cream while it's still warm. 

TIP: A melon baller makes the perfect size ice cream scoop for mug cakes.
WARNING: Remember that jam is hot, don't burn your mouth!

Easy Microwave Jam Sponge Pudding

An easy jam pudding made in a mug and cooked in the microwave in just 2 minutes.
Prep time: 2 MCook time: 2 MTotal time: 4 M

Ingredients:

  • 4 tbsp plain flour (see notes if using self-raising flour)
  • 2 tbsp sugar
  • ½ tsp baking powder
  • pinch salt
  • 1-2 tsp sprinkles
  • 1 tbsp +1 tsp oil
  • 3½ tbsp milk
  • ½ tsp vanilla extract
  • 1-2 tbsp jam (depending how much jam you like)

Instructions:

  1. Add the dry ingredients to your mug and mix.
  2. Add the oil, milk and vanilla extract and whisk to a smooth batter.
  3. Add a dollop of jam and push below the surface.
  4. Microwave for 2 minutes.
  5. Top with a scoop of vanilla ice cream and serve.
  6. Enjoy!

Notes:

Use a large mug or cup that is microwave safe.
If you only have self-raising flour you can use that. If using s-r flour, you can add a pinch of baking powder or bicarbonate of soda for extra rise, but that's optional.
Use a mild oil that won't flavour the cake.
You can use whatever milk you usually buy, vegan or dairy.
Add a few sprinkles to the top of the sponge before baking, it just makes it pretty.
If you are turning the sponge onto a dessert plate or bowl, grease the mug before adding the ingredients and once it's cooked, loosen the edges with a knife before turning the pudding out.
Mug cakes are best served on the day they are made and mug puddings are best served warm.

    1. Yes I remember my mum making it too, although I am sure it came out of a tin. My mum did bake cakes, but I do remember some tinned puddings. This one is good with ice cream or custard. If you are turning it into a bowl to serve with custard, grease the mug before you start and loosed it with a knife before turning it out.

  6. Sounds delicious - my mum used to make a pudding with jam on top but I don't have the patience for steaming a pudding - so I am going to try this. I have been making a brownie in a mug a lot - keep meaning to branch out with mug cakes but I love this brownie - but I must try this jam pudding for a kick of nostalgia.
