MICROWAVE BLACKBERRY CRUMBLE (VEGAN MUG CAKE)


My latest mug cake is more of a pudding than a cake.

A sumptuously fruity blackberry crumble.

Just like an oven-baked fruit crumble or crisp as it's sometimes known, but ready in 2 minutes and just the perfect (generous) portion for one.

There's no need to wait for Sunday to come around to enjoy a crumble with ice cream or custard.

FROZEN BLACKBERRIES


I use frozen blackberries to make this crumble, but you can use fresh blackberries.

It's really handy to have a bag of frozen blackberries in the freezer, then you can make this quick pud in a few minutes and store the rest until you need them again.

They are also usually cheaper for a larger amount.

CRUMBLE TOPPING


I'm a good Scots lass so I make my crumble topping with oats.

The crumble topping is made from flour, porridge oats (also known as rolled oats), brown sugar, a pinch of salt and dairy-free spread.

The brown sugar gives it a wonderful caramel flavour. I use demerara sugar, but any brown sugar would do.

That crumble topping looks likes it's piled really high, but it does reduce quite a lot while it cooks. 

My husband would have liked more topping. 

If you would like more crumble topping and your mug is big enough, you could make a bigger batch by scaling up the crumble ingredients.

WHAT DO I NEED TO MAKE MICROWAVE BLACKBERRY CRUMBLE?

You don't need much in the way of equipment to make this blackberry crumble. Here's what you will need:

  • A microwave
  • A large microwave-safe mug
  • A bowl to mix the crumble in
  • A tablespoon (for measuring out the ingredients)
  • A teaspoon (for measuring out the ingredients)

WHAT INGREDIENTS DO YOU NEED TO MAKE MICROWAVE BLACKBERRY CRUMBLE?


I use a different sugar for the berries and the crumble, but you could use either brown sugar or caster sugar for both. 

I think it's better with caster sugar to sweeten the berries and brown sugar for the crumble for that caramelised flavour, but don't worry if you just have one or the other.

  • Frozen blackberries
  • Caster sugar
  • Plain flour
  • Porridge oats
  • Demerara sugar (or brown sugar)
  • Salt
  • Dairy-free spread (or vegan butter)

HOW TO SERVE BLACKBERRY CRUMBLE


Once your microwave blackberry pudding is cooked, serve it:

  1. With a scoop of vegan vanilla ice cream (we like Swedish Glace Vanilla Ice Cream)
  2. Topped with a generous amount of dairy-free single cream.
  3. Topped with whipped vegan double cream
  4. Topped with a swirl of vegan squirty cream.
  5. With vegan custard (if you cook your crumble in a bowl, you could add the custard to heat at the same time), we like Alpro custard.
  6. On its own! Just dig in with a spoon.

WHY IS MICROWAVE BLACKBERRY CRUMBLE IS SO GOOD?


  1. You can have it almost instantly, as soon as you have a craving for something sweet.
  2. It makes a great last-minute dessert.
  3. It's frugal. It takes a small amount of ingredients to make this pudding.
  4. It can be counted as one of your five-a-day. It contains one complete portion of fruit.
  5. It's the perfect (generous) portion for one.
  6. There's very little washing up.
  7. It's super quick!
  8. It's very easy to make. Even the kitchen-shy can manage this recipe.
  9. It's comforting!
  10. It tastes fabulous.

HOW TO MAKE MICROWAVE BLACKBERRY CRUMBLE

STEP 1


Measure the plain flour and porridge oats into a bowl.

The oats give the crumble more texture and a nutty flavour, as well as giving you have sustained energy boost.

Add salt and brown sugar to the bowl. I like to use demerara sugar.

Add dairy-free spread or vegan butter to the bowl.

Rub the butter (dairy-free spread) into the other ingredients with your finger tips, until you have a breadcrumb-like texture.

Add your blackberries to a large microwave-safe mug.

Add some sugar to the berries and mix.

Now heap on the crumble topping.

Microwave the pudding for 2 minutes.

Now doesn't that look glorious?

As you can see the crumble topping does reduce in size.

Microwave Blackberry Crumble

A quick and easy blackberry crumble for one, baked in the microwave.

Ingredients

  • 3 tbsp plain flour
  • 3 tbsp demerara sugar
  • 2 tbsp porridge oats (rolled oats
  • a pinch of salt
  • 1 tbsp dairy-free spread (vegan butter)
  • 120g/ 0.75 cup frozen blackberries
  • 1 tsp caster sugar

Instructions

  1. Add the flour, porridge oats, salt and demerara sugar to a bowl and mix.
  2. Add dairy-free spread and rub in with your finger tips until you have the consistency of breadcrumbs.
  3. Add the blackberries and caster sugar to your mug and mix.
  4. Top the berries with your crumble mixture and microwave for 2 minutes.
  5. Enjoy!

Notes:

You can use fresh berries instead of frozen, they will be firmer in the finished crumble.


You can use whatever sugar you have if you don't have both caster sugar and demerara sugar (or brown sugar).


Microwaves vary in strength. My microwave is 700w, if yours has a higher wattage it may need less time and if it is lower it may need a little longer.

  1. Yum! What a delicious and easy recipe1 I like making fruit crisps but that is definitely more of a project. this is something to whip up anytime! Nice to be able to use fruit from the freezer.

  6. This looks good - I have berries in the freezer that I have squirrelled away when we haven't eaten them fresh. I love the sound of this but I love love a brown and crispy topping on a crumble - though I am in agreement with you that oats are a must!
