SPICY LENTIL VEGAN SAUSAGE ROLLS


Occasionally we treat ourselves to sausage rolls from our local health food shop. 

They have a wide range of flavours of vegan sausage rolls and pasties including spicy lentil, haggis, chilli bean, spinach and lentil and standard vegan sausages rolls.

My favourite is the spicy lentil sausage rolls, so of course, I had to have a go at recreating them.

I am rather pleased with the results. They are very close to the original and very tasty.

There's nothing quite like a vegan sausage roll just out of the oven and still hot with all that golden, flaky puff pastry.

Mmmmm!


FULL SIZE OR MINI SAUSAGE ROLLS?


Usually, when I make vegan sausage rolls at home, I make them full size, but this time I thought I would change things up and make mini, bite-sized sausage rolls.

When you make them, you can make them full size or mini, depending on what you fancy.

This recipe makes 24 mini sausage rolls or 8 more substantial sausage rolls.

WHAT YOU NEED TO MAKE SPICY LENTIL VEGAN SAUSAGE ROLLS


Here are the few simple ingredients you need to make these vegan sausage rolls.


  • PUFF PASTRY
  • OLIVE OIL
  • ONION
  • GARLIC
  • BROWN LENTILS
  • OATS
  • VEGAN BUTTER
  • GROUND CUMIN
  • CHILLI FLAKES
  • SALT
  • WHITE PEPPER
  • POPPY SEEDS

WHICH KIND OF PUFF PASTRY?



I used ready-rolled puff pastry, but you can use a block of pastry and roll it yourself.

Ready-rolled puff pastry is just so convenient and easy to use. Just unroll it and you're ready to go.

Of course, if you buy a slightly bigger block of pastry, you could roll it a little deeper if you like.

Are you good at rolling pastry?

Me, well I am not great at keeping it rectangular as I roll, so I think I'll stick to ready-rolled.


IS PUFF PASTRY SUITABLE FOR VEGANS?


Now, this is a rather important point. Do make sure the puff pastry you pick up is suitable for vegans.

To be honest, most shop-bought puff pastry is vegan these days, accidentally so, from the supermarket's own brands to the bigger well-known brands.

It's always best to check if you aren't sure and avoid all-butter puff pastry as it is full of dairy butter.


HOW DO YOU GET A GOLDEN FINISH ON PUFF PASTRY WITHOUT AN EGG WASH?


Get a golden finish on cooked puff pastry and keep it egg-free and dairy-free. 

It's super simple to do.

Just brush the pastry with a little olive oil before you pop it in the oven to bake and it will come out golden, puffed and delicious.

WHICH LENTILS SHOULD I USE?


For these spicy sausage rolls, you want a firm lentil that is fairly soft, but will hold it's shape and have a bit of substance.

I used tinned brown lentils.

You could also use green lentils, puy lentils or black beans for this recipe.

Red lentils would not work as they soften and turn into mush when cooked.

Don't get me wrong, you could make a lovely sausage roll filling with red lentils, but that is a very different recipe and one for another day.

You can use tinned lentils or soak and cook your own, depending which you prefer. 

The weight included in the recipe is for drained, tinned lentils.


WHICH SPICES WORK BEST IN SAUSAGE ROLLS?


There are a variety of spices that would work well in these sausage rolls, but I kept it simple and used just three.

Ground cumin, chilli flakes and white pepper.

It works really well.

They aren't hot spicy, but they have a pleasant warmth and a good flavour.

Feel free to add more chilli flakes or some additional chilli powder if you'd like more heat in your sausage rolls.

WHY ARE THEY OATS IN THE FILLING?


The oats add bulk to the filling but also add a great texture and a good mouth-feel.

A lot of people use breadcrumbs when making a sausage roll filling (and homemade burgers too), but being the guid Scottish lass I am, I use oats.

They are always my go-to filler.


WHICH TYPE OF OATS?


My standard choice for recipes is usually porridge oats and I use them in this recipe too.

I always have a big container of them in the kitchen for making porridge in the morning and I add them to so many other dishes too.

Porridge oats are also known as rolled oats.


CAN I MAKE THESE SAUSAGE ROLLS GLUTEN-FREE?


You can definitely make these sausage rolls gluten-free.

Just swap the pastry with gluten-free pastry and the porridge oats with gluten-free oats.

Just make them exactly the same way.

HOW TO SERVE SPICY LENTIL SAUSAGE ROLLS


These are so tasty, you will just want to eat them right away, warm from the oven, but here are a few more ideas of how to serve them:

  1. Warm out of the oven, as they are.
  2. Hot with chips and baked beans, nursery style.
  3. As a bitty dinner served with crunchy salad, crusty bread and hummus.
  4. For movie night with hot slices of pizza, baked sweet potatoes fries and garlic bread. 
  5. Hot with mashed potatoes, broccoli, peas and onion gravy.
  6. Cold in lunch boxes.

HOW LONG CAN YOU STORE LENTIL SAUSAGE ROLLS?



Once cool, these can be kept in the fridge for 4-5 days.

Store them in an airtight container lined with kitchen paper.



CAN LENTIL SAUSAGE ROLLS BE FROZEN?



Yes, you can freeze thm, then bake them from frozen.

Make up these mini sausage rolls, then cut them into pieces, score, then flash freeze before moving to a freezer bag.

Just pop them in the oven when you are ready for them.

Remember that brushing of olive oil to give the golden finish.

HOW TO MAKE SPICY LENTIL SAUSAGE ROLLS

STEP 1

  • Preheat the oven.
  • Saute the onion and garlic in olive oil until soft and translucent.
  • Add the rinsed (cooked) lentils (I used tinned).
  • Add vegan butter, oats and spices.
  • Keep scrolling for the full printable recipe.

STEP 2



  • Mix well and set aside to cool. It will cool faster if you remove it from the pan.
  • Unroll your puff pastry and cut into three long, wide strips.
  • Lay a sausage shape stack of filling along the centre of each strip.
  • Rub a little water along one long edge.
  • Bring the two sides up over the filling, stretching a little as you go and seal with your fingers.

STEP 3


  • Cut into small bite-sized pieces and place on a baking tray (or two) lined with non-stick baking paper.
  • Cut a couple of lines into the top of each pastry.
  • Brush with a little olive oil and sprinkle on poppy seeds. You may be more generous with the poppy seeds if you like. My boy was watching me with eagle eyes to make sure I didn't put too much on.
  • Bake until golden, then serve while warm, flaky and delicious.
  • Enjoy!

Spicy Lentil Vegan Sausage Rolls

The most amazing mini spicy lentil vegan sausage rolls. Easy to make and loved by kids and adults alike.

Ingredients

  • 375g (13 oz) puff pastry (ready-rolled or block)
  • 1 tbsp olive oil
  • 1 large onion, finely diced
  • 1 large clove garlic, crushed or grated
  • 265g brown lentils (400g/14 oz tin drained)
  • 80g (1 cup) porridge oats (also known as rolled oats)
  • 2 tbsp vegan butter
  • 1 teaspoon ground cumin
  • ½ teaspoon chilli flakes (more if you like)
  • ½ teaspoon salt
  • ½ teaspoon white pepper
  • 1 teaspoon poppy seeds

Instructions

  1. Preheat the oven to 180c/160c fan/350f/gas mark 4.
  2. In a pan, saute the onion and garlic in the olive oil until soft and translucent.
  3. Take off the heat and add the lentils.
  4. Add the oats, vegan butter (or spread) and spices) and mix well.
  5. Spoon into another dish to cool.
  6. Once cool, take your pastry out of the fridge and carefully unroll (or roll out into a long rectangle, if you are using a block).
  7. Cut the pastry into three long strips.
  8. Pile a sausage-like strip of filling along the middle of each strip and dampen one edge with a little water.
  9. Pull the two sides up over the sausage of filling, stretching gently as you go and seal.
  10. Cut into bite-sized pieces and place on one or two lined baking sheets,
  11. Cut a couple of slits into each sausage roll, then brush with a little oil and sprinkle with poppy seeds.
  12. Bake for 20-25 minutes until golden.
  13. Serve warm and enjoy!

Notes:

  • You can use any lentil that will hold its shape. Brown, green or puy lentils all work well.
  • You can use gluten-free oats and pastry.
  • Feel free to add more chilli if you would like more of a kick.
  • Once cool, these will keep in the fridge (in an airtight container for 4-5 days).
  • If you want to freeze them, freeze before baking, then bake from frozen.

  21. You're missing seasonings. If you really wanted them to taste like authentic sausage, you can't skip the fennel seeds. Dry roast a handful in a pan first until they are aromatic, and then simply add them to your onion/lentil mixture. It'll make the flavors pop!
