This fudgy chocolate brownie cooks in just one minute in the microwave!

Just one minute, that's it!

It doesn't take much longer than that to pour in and mix the ingredients either.

WHEN YOU NEED MUG CAKES

  • For something sweet at lunchtime
  • For an afternoon snack when you hit that slump
  • At work with a cuppa, just take your dry ingredients & wet ingredients to work with you in separate tubs, pour into your mug, stir and microwave for 1 minute to the jealousy of your colleagues
  • For dessert for one
  • As a treat for kids
  • When you don't have time to make a batch of brownies

MUG CAKES


I love mug cakes.

My son loves mug cakes and my husband loves mug cakes.

In fact, that husband who never goes into the kitchen unless I'm passing him some food is actually venturing in there and making them for himself.

Last night he made himself my jam pudding mug cake and tucked into it with a dollop of Swedish Glace vanilla ice cream (vegan) on top.

WHY MUG CAKES ARE SO GOOD?


  1. They are the perfect portion for one.
  2. They are super quick.
  3. They use a small quantity of ingredients.
  4. They are cheap.
  5. They are very easy to make, even for children or those who aren't confident in the kitchen.
  6. There's only a mug, a spoon and a measuring spoon to wash up.
  7. They taste great!

WHAT TYPE OF MUG SHOULD I USE?


You want a large mug for making mug cakes. The sort you might use for soup or hot chocolate.

I like glass mugs as you can see the mug cake, which is rather nice.

In case you are wondering, my panda mug is from Asda.

Oh and most importantly make sure your mug is microwave safe.

MICROWAVE POWER

Microwaves vary in power.

My microwave is 800 watts.

If your microwave is a higher wattage you may find this brownie is ready in 40-45 secs.

If you have a lower wattage microwave, it may need an extra 10-20 seconds.

HOW TO MAKE CHOCOLATE BROWNIE MUG CAKE

STEP 1


Add flour to your mug, then cocoa powder.

Add baking powder, salt and chocolate chips.

Mix well then add vanilla extract.

Now add golden syrup to sweeten the cake and oil.

Add whatever milk you use (I used oat milk) and stir well. You can add a few more chocolate chips on top if you like.

Microwave for one minute. It's ok if you can see some wet batter. It will continue to cook for a couple of minutes once it's out the microwave and you don't want dry cake.

1 Minute Chocolate Brownie Mug Cake

Need a quick chocolate fix? This is it! One minute chocolate brownie mug cake. Vegetarian or vegan depending on what type of milk you use. Super easy, super chocolate and super delicious.

Ingredients

  • 2 tbsp plain flour
  • 2 tbsp cocoa powder
  • ½ tsp baking powder
  • pinch of salt
  • ½ vanilla extract
  • 1 tbsp vegetable oil
  • 2 tbsp golden syrup 
  • 3 tbsp milk
  • 2 tbsp chocolate chips

Instructions

  1. In a large microwave mug add all the dry ingredients and chocolate chips then mix to combine.
  2. Now add the vanilla extract, oil, and milk and mix well.
  3. Add a few extra chocolate chips on top, then microwave for 1 minute.
  4. Leave it to sit for a minute or two before eating.
  5. Enjoy!

Notes:

You may use self-raising flour instead of plain and leave out the baking powder. The chocolate chips are optional. My microwave is 800 watts, if yours is less powerful or more powerful, you may need to microwave a little less time or a little more. These are good served warm with a dollop of vegan vanilla ice cream.

  13. Brownie in a mug is my fave mug cake - mine does not have baking powder so is lovely and dense. I love the sound of oil (instead of melting butter) and golden syrup so will have to give this version a go!
