Quick No-Knead Onion Bread (no yeast)

This no-knead bread is an easy beer bread flavoured with dried onions, salt and pepper. The perfect bread to serve with easy homemade soup.

NO KNEAD ONION BREAD

This glorious golden loaf is a simple and quick bread to make at home.

You don't need any fancy flours to make it either. No need for strong bread flour.

It's made with self-raising flour and flavoured with dried onions.

It's a rustic bread that's perfect to serve with soup.

It's also rather fabulous toasted.

It's not a really a good loaf for sandwiches, you need a finer loaf with a closer texture for that.

QUICK AND EASY SOUP


The soup mixes are super easy to use.

  1. Empty the soup mix and lentils or barley into a pot. No chopping and no need to pre-cook anything. 
  2. Add 900ml of vegetable stock.
  3. Bring to the boil, lower the temperature and cook for 45 minutes.
  4. You can serve it as it is, mash some of it or use a blender to turn it into a smooth soup.
  5. Simples!

WHY IS BEER BREAD SO GOOD?


I'm a big fan of beer bread, here are some reasons why:

  1. Beer bread is a good bread for beginners as it's so easy and there's no kneading.
  2. It's also good if you want to make a quick loaf of bread.
  3. You don't need any fancy ingredients. You probably have everything you need already.
  4. It can be flavoured in so many ways. 
  5. It's great for dunking in soup.
  6. It's good slathered in butter (vegan of course)
  7. It's so good toasted.
  8. It takes a few minutes to make the dough.
  9. You just mix it with a spatula or wooden spoon.
  10. It bakes in just 45 minutes.


HOW LONG DOES BEER BREAD LAST


Beer bread is best served the day it is made.

If you have some left the next day, I wouldn't serve it as it is (it's past it's freshest point) but it does make great toast.

Day three I would give it to the birds. Seriously!

It's quick bread! Make it quick, eat it quick!

WHAT SIZE OF LOAF TIN?


A 2-pound (900g) loaf tin is a good size for this bread.

Loaf tins do vary from brand to brand. 

Mine is 21 cm long, 12 cm wide and 6 cm deep (8  x 4 ½  x 2 ¼  inches).

Don't worry if your's is a little small or a bit bigger. 

However, a one-pound tin will be too small.


DO I NEED TO LINE THE LOAF TIN?


No, there is no need to line it, just grease it well.

I grease my loaf tin with dairy-free spread and the loaf always slides out easily.

If you really wanted to you could use a loaf tin liner when baking bread, but I wouldn't waste time cutting parchment (greaseproof) paper to fit it.

Of course, if you have one of those tins with holes, then lining is a must.



WHAT YOU NEED TO MAKE NO-KNEAD ONION BREAD


You only need a few simple ingredients to make no-knead onion bread.

  • Self- raising flour (see below for alternatives)
  • Dried onions
  • Garlic granules (optional)
  • Sugar
  • Salt
  • Pepper
  • Beer (or lager)

WHAT OTHER FLOUR CAN I USE?


Don't have self-raising flour? 

Here are a few options:

  • Wholemeal self-raising flour
  • Plain flour + 1 tablespoon baking powder
  • Wholemeal flour + 1 tablespoon baking powder

DRIED ONIONS


I used dried onions and garlic granules to flavour this loaf.

If you can't find them you could use fried onion, which is another type of dried onion you will find in the world food aisle of the supermarket.

You could also use onion granules or powder, but 2 tablespoons would be enough.

The garlic granules (or powder) help to boost the flavour too,


WHAT TYPE OF BEER SHOULD I USE IN BEER BREAD?


You can use beer or lager to make beer bread.

The flavour of the beer will influence the final flavour.

The flavour of a lager or mild beer is hard to detect in the bread, but a stronger beer like a stout, Guinness or craft beer will have a stronger flavour and you will taste the difference.


CAN I SERVE BEER BREAD TO CHILDREN


Beer bread is perfectly safe for children.

There are about 10 slices in this loaf so only 33 ml of beer in each slice, which is about 2 tbsp.

Most of the alcohol will evaporate as the loaf bakes, so there is a trace amount left.

If you're still worried you could use an alcohol-free beer.


OTHER FLAVOURS YOU CAN ADD TO BEER BREAD


This beer bread is flavoured with dried onions and garlic granules, but it can also be left plain. You can also add other flavours to it or a combination.

HERBS


Dried herbs work better in bread than fresh unless it is a woody herb like thyme.

  • basil
  • chives
  • oregano
  • parsley
  • thyme

SPICES


You can also add spices to a beer bread mix.

  1. chilli flakes
  2. chilli powder
  3. ground coriander
  4. ground cumin
  5. ground turmeric
  6. paprika

A FEW MORE IDEAS


You can stir these through the dry mix or swirl through the wet dough. If you are swirling through the wet dough, you need to be quick and get the bread in the oven as soon as possible.

  • hot sauce
  • nuts (chopped)
  • olives (chopped)
  • pesto
  • red pesto
  • seeds
  • sun-dried tomatoes (patted dry and chopped)

HOW TO MAKE NO KNEAD ONION BEER BREAD

Making Onion Bread - Step 1 - flour, sugar and salt

STEP 1


  1. Preheat your oven and grease a 2 lb/900g loaf tin.
  2. In a large mixing bowl add the flour, salt, pepper and sugar.

  1. Add the onions and garlic granules.
  2. There is no need to chop or crush the dried onions, just add them as they are.

  1. Give the mixture a good mix.
  2. Measure out your beer. Don't do this until you are about to add it. You don't want to lose those bubbles or fizz!

  1. Pour the beer into the dry mix.
  2. Use a spatula to fold beer and dry ingredients together until just combined. Do not over mix.

  1. Pour the dough into your prepared loaf tin and bake until golden.
  2. When you remove it from the tin, knock on the bottom of the loaf, if it's ready it will sound hollow.

No Knead Onion Bread

No Knead Onion Bread

This no-knead bread is an easy beer bread flavoured with dried onions, salt and pepper. A rustic bread that's so good with soup.
Prep time: 5 MinCook time: 45 MinTotal time: 50 Min

Ingredients

  • 375 g / 3 cups self-raising flour
  • 5 tbsp dried onions
  • 1 tbsp brown sugar
  • 2 tsp garlic granules (or powder)
  • 1 tsp salt
  • a good grinding of black pepper
  • 330 ml /1.4 cups beer

Instructions

  1. Preheat your oven to 190c/170c fan/375f/gas mark 5.
  2. Grease a 2 lb / 900g loaf tin.
  3. Add the flour, sugar, dried onions, garlic granules, salt and pepper to a mixing bowl and mix well.
  4. Pour the beer into the dried ingredients and fold in until just combined. Try not to over mix.
  5. Bake in your pre-heated oven for 45 minutes.
  6. Remove from the tin. 
  7. Turn the loaf upside down and tap the bottom, if it sounds hollow it is ready, if not pop it in for a little longer.
  8. Cool on a baking rack, then slice and serve.
  9. Enjoy!

Notes:

If you don't have self-raising flour, you can use plain flour and 1 tbsp of baking powder as the raising agent.

If you can't find dried onions, you can slice onions, fry them in a little oil, dry of on kitchen paper then add to the dry mix.

You could also use onion powder or granules instead of dried onions.

Beer bread is best served on the day it is made, but you can toast it the next day.

  13. Hi Jacqueline, Have you tried making bread in the air fryer? I have a Tower shelf one, and wondered what temperature & for how long would i bake this for?

  14. Not yet but it should work fine, keep an eye on it though as it will be quicker. Preheat it first. I would bake it at 180 c for about 40-45 minutes, but that's just a guess.
