We all love roast potatoes and let's admit it, they are the star of the show in a Sunday roast at Sunday dinner or when served on other special occasions like Easter or Christmas.

They are usually seasoned with salt and maybe some rosemary if you're lucky, but let's elevate the humble roast potato.

Still crispy on the outside and fluffy on the inside, but use this tasty seasoning mix and it will bring out the best of any old spud.

Add this seasoning blend and your roast potatoes will still have the irresistible crunch and golden finish you expect, but they'll be finished with a punchy mix of umami, savoury flavours and a touch of salt, meaning every bite is moreish and unforgettable.

What you need to make homemade roast potato seasoning



Here are the simple ingredients you need to make this must-have seasoning blend.

  • Semolina - I use fine semolina
  • Nutritional yeast - also called nooch
  • Garlic powder - or garlic granules
  • Onion salt - so no need for regular salt, this one has extra flavour too
  • Paprika - mild or smoked
  • Chilli powder - for a touch of warmth
  • Black pepper - to season

Tweaks you can make



This recipe is so adaptable, you can tweak it every time.

Here are a few ideas.

  1. Add dried oregano
  2. White pepper instead of black pepper for more warmth 
  3. Hot chilli powder for more heat
  4. Ground almonds for a different flavour
  5. Lemon peel for extra flavour

10 tips for the best roasties when using seasoning



  1. Use floury potatoes like Maris Piper, King Edward or Desiree (Russet potatoes in the US).
  2. Heat your oven, then pop your roasting tin in the oven to heat while you par-boil the potatoes.
  3. Cut your potatoes into even-sized pieces. 
  4. Parboil the potatoes in enough water to cover them, with a generous pinch of salt, for a few minutes.
  5. Drain your potatoes in a colander, giving them a toss to fluff up the edges.
  6. Leave them in the colander to air dry.
  7. Add your olive oil to the hot pan to heat, then carefully spoon in your potatoes and toss them in the oil.
  8. Turn them during cooking for an even crisp.
  9. Towards the end of cooking, mix 2 tablespoons of the roast potato seasoning blend with a little olive oil and brush over your potatoes, then put them back in the oven to finish cooking.
  10. Serve while hot and crispy!


What else can you use the seasoning mix for?



Once you've made a batch of this gorgeous spice blend, you will be wondering what else you can sprinkle it on, so here are a few ideas.

  • Sprinkle it generously over beer bread dough or other bread dough before it goes in the oven.
  • Mix it with olive oil and toss green beans in it before lightly roasting or cooking in the air fryer.
  • Season your sweet potatoes with it, either sweet potato wedges or sweet potato fries, before cooking.
  • Toss torn pieces of firm tofu in some vegan mayo in a bowl, then toss in this roast potato spice blend in another bowl before baking until crispy.

Storing the spice blend



I like to store my potato seasoning in a clean, dry jam jar with a tight-fitting lid, but any airtight container will do.

You can keep the seasoning for up to 4 months, but it will be used much sooner than that, especially if you use some of my tips.

Just remember to give the mix a good shake before using it, as the ingredients will settle as it sits and you want a good mix of flavours on your potatoes.

How to make homemade roast potato seasoning

Step 1

  • In a large bowl add your semolina.
  • Then add nutritional yeast (nooch), garlic powder and onion salt.

  • Now add the paprika and chilli powder.
  • Finally, add a generous amount of black pepper.

  • Give the seasoning blend a really good mix until well combined.
  • Pour into your jam jar or another airtight container with a tight fitting lid.
  • Plan your next roast, such as a miso mushroom nut loaf or a butternut squash wellington and remember lashings of onion gravy!

Roast Potato Seasoning for Perfect Roasted Potatoes

A quick and easy roast potato seasoning to make your roasted potatoes the best you've ever made. It's plant-based, so it's suitable for dairy-free and vegan diets

Ingredients

  • 7 tablespoons semolina (I use fine semolina)
  • 3 tablespoons nutritional yeast (also called nooch)
  • 1 tablespoon garlic powder (garlic granules)
  • 1 tablespoon onion salt (or onion powder and add salt too)
  • 1 tablespoon paprika
  • 1 teaspoon chilli powder (more if you like)
  • a generous pinch of black pepper (more if you like)

Instructions

  1. In a large bowl, mix together all the ingredients.
  2. Transfer to a clean, dry jam jar or other airtight container with a tight lid.
  3. Mix 2 tablespoons of the seasoning with some olive oil, then brush over your potatoes near the end of their roasting time.
  4. Enjoy!

Notes

  • Store in a jam jar or an airtight container for up to 4 months.
  • You can add more chilli powder for heat.
  • Don't brush it onto the potatoes at the start of cooking as you will lose a lot of the flavour and the spices could burn.
  • Also, brush the seasoning mixed with oil onto green beans before lightly roasting or sweet potato wedges or fries before cooking.
