I just couldn't resist!

It was futile!

I was too weak!

Tesco were offering me 3 boxes of Pakistan Mangoes for £10 with between 5 and 6 mangoes per box. I hope the offer will last for a while, because the mangoes certainly aren't.

They are sweet, juicy and utterly lush!

So far I have eaten them raw, made smoothies and this lassi, which is sensational thanks to the spices. I also plan to make some jam and chutney.

I feel a slight panic at the thought of not getting any more of these sumptuous, exotic globes. I think I might have a slight dependency issue.


Traditionally mango lassi is spiced with cardamom seeds, but I also added some freshly grated cinnamon which is an inspired addition if I do say so myself.

It also gave me a chance to try out my new cinnamon grater and fresh cinnamon sticks from Cinnamon Hill. I used fresh Ceylon cinnamon from Sri Lanka.

Cinnamon Hill sell boxes of fresh Ceylon and Saigon Cinnamon along with the most stylish graters. Each of the cinnamon sticks is individually wrapped to keep them fresh and the difference in flavour to the ground ginger that comes in a jar is amazing.

I am going a bit cinnamon crazy at the moment and grating some over everything.

Mango Lassi with Cardamom and Cinnamon
A spicy, yet refreshing Summer drink with the sweet flavour of mango.
Ingredients
  • 1 large ripe mango
  • 180g Total Greek Yoghurt
  • 200ml milk
  • 2 tsp honey
  • 2 cardamom pods
  • a good grinding of cinnamon
Instructions
1. Remove the fresh from your mango. Lakeland sell a good tool to simplify this process.2. Crush the cardamom pods between your fingers and remove the seeds.3. Add all the ingredients, except for the cinnamon to a blender and whizz until smooth. You may add ice, if your blender is powerful enough,4. Serve in glasses. Grate cinnamon over each lassi before serving.5. Enjoy!
