This is my first batch of vegan coleslaw. To be honest I usually only make homemade coleslaw in the summer for picnics, buffets or BBQs. 

I have a new recipe idea for butternut squash bean burgers that I am trying out tomorrow and I thought they would be great topped with some coleslaw in the bun, so here we are.

I pretty much stuck to my regular red cabbage coleslaw recipe, which I really like and just turned it into a vegan recipe.

Vegan Mayo

We've not been keen on any shop-bought vegan mayo over the years, so just skipped it. I do occasionally make my own homemade vegan mayo, which is rather nice, but it's thinner and more a dressing for salad than a thick creamy mayo.

We were excited when we heard Hellman's were bringing out a vegan mayo as it was always the brand we bought in the past. I have to say we haven't been disappointed. It's thick, creamy and just what you'd expect from a Hellman's mayo.

And just in case you are wondering, no I am not working with them, but I do like to share with you our family favourites from the supermarket, to save you the trial and error. Let's face it not all vegan products are great.

Vegan Coleslaw with Fresh Herbs

I kept this coleslaw simple, with just a few fresh ingredients, plus mayo and seasoning.  Simple sometimes is best.

In a large bowl I mixed together finely shredded white and red cabbage, grated carrot and finely sliced red onion.

I then added the vegan mayo and fresh dill, then seasoned the coleslaw and gave it all a good mix.

If you are vegetarian, you can just use regular mayo, no need to change anything.

What should I serve with coleslaw?

Now you have a big bowl of coleslaw you may be wondering what to serve it with. Of course you could just dig in with a spoon, but a meal is a better idea. Here are 10 ideas for you to try.

  1. Cheese, coleslaw and pickle sandwich. Spread one slice of  soft wholemeal with sandwich pickle, top with some cheddar (veggie or vegan) and then a generous serving of coleslaw.
  2. Top a burger in a bun with coleslaw. Add some salad leaves and slices of tomato too.
  3. The classic. A baked potato with grated cheddar (veggie or vegan) and coleslaw.
  4. Top a hot dog in a bun with mustard and coleslaw.
  5. Add some to your salad.
  6. Serve it on the side of a toastie with salad.
  7. Serve with tacos.
  8. Serve with nachos to cool things down, instead of sour cream.
  9. Mix through just cooked and cooled (under cold water) pasta as a tasty dressing for pasta salad.
  10. Serve on pitta bread with salad and pickled beetroot.

Vegan Coleslaw with Fresh Herbs

An easy recipe for creamy vegan coleslaw with fresh dill.

  • ½ small white cabbage, finely shredded
  • ¼ small red cabbage, finely shredded
  • 1 large carrot, grated
  • ½ red onion, halved and finely sliced
  • 5-6 tbsp Mayonnaise
  • Large handful of fresh dill, chopped
  • a good grinding of salt and pepper


  1. Add all the vegetables to a large bowl.
  2. Add the mayo, fresh dill and season with salt and pepper, then mix well. Taste to check the seasoning.
  3. Store in a airtight container in the fridge for 3-4 days.
  4. Enjoy!

A simple homemade salsa which zings with fresh flavours and can be used as a dip or to perk up so many dishes.


  1. I love coleslaw - often buy coleslaw dressing which is a little thinner and sweeter than mayo and keep it on hand so I can make a quick coleslaw to add more vegies to a meal, but occasionally I make my own dressing. I really like vegannaise - I guess it must be in the UK so sounds like it is not a favourite with you.

    1. No, I've never tried that one, Graham tried a few and hated them, I tried this one and was impressed.

  2. I haven't made my own coleslaw for years. I did not know Hellman's made a vegan mayonnaise either. I will have to try this and see what my daughter thinks. Jill

    1. Yes it is definitely a classic, just tweaked for a vegan diet. I'm not sure everyone uses dill though.

    1. Oh you should make your own from time to time. It's quick to make and so different to shop bought. Much more interesting in texture and flavour.
