Phili Scallion Toastie or as I like to call it Chilli Phili Toastie!

Philadelphia, that stalwart of soft cheeses, challenged me to come up with a quick and tasty recipe using their creamy soft cheese.

Oh how I did it justice!

Are you drooling looking at it? I am, for I remember how good it tasted!

Chilli Phili Toastie

I know, I know, they are spring onions! But don't they sound fancier when called scallions?

So you want to EAT IT know what's in it right? Philadelphia, grated cheddar, spring onions (scallions), chilli flakes and black pepper. Creamy and oozing over slices of richly-flavoured beef tomatoes, sandwiched between slices of crunchy toasted bread. Mmmmmmmm!

Phili Scallion Toastie
A creamy oozing cheese toastie with a kick of chiili and a crunch of spring onion (scallion), paired with slice of beef tomato and sandwiched between crunchy toasted bread. A lunch to fall in love with!
Ingredients
  • 30-50g extra mature cheddar
  • 2-3 tbsp Philadelphia soft cheese
  • 3 spring onions (scallions)
  • ½ tsp chilli flakes
  • a good grinding of black pepper
  • 2 generous slices beef tomato
  • 2 thick slices white toastie bread
Instructions
1. Heat your toastie/panini/george foreman grill. 2. Grate the cheddar and mix with the Phildelphia.3. Finely slice the spring onions and add to the cheese, along with the chilli flakes and black pepper. Mix well and set aside.4. Lightly butter (optional) 2 slices of bread. I like to toast the bread a little in the machine and then flip it over before filling it.5 Fill the toast sandwich with the cheese filling and top with 2 slices of tomato. Season again, top and grill until the bread it toasted and golden and the cheese is hot and oozing.6. Take a big bite!7. Enjoy!
Notes 
If you have a toaster pocket, you could make this in a conventional toaster. If you don't have either, just pop the cheese mixture into the microwave for a few seconds to melt, then make a toast sandwich.
