Carrot, Hummus & Avocado Sandwiches



I don't often post a sandwich recipe, but sometimes a sandwich is too good not to share and this is one of those.

Creamy and crunchy, garlicky and sweet, with a little tang of lemon and such beautiful colours. How can you resist?

I made my sandwiches with shop bought hummus this week, but it is even better with homemade hummus. You can find my recipe for homemade hummus here.

As well as being super tasty this sandwich is a powerhouse of nutrients too.


Wholewheat Bread



Fiber, protein, carbohydrates, vitamin E, folate & essential omega 3 fatty acids.

Carrots


Pro-vitamin A, vitamins C, D, E, K, B1, B6, biotin, potassium, calcium, magnesium, phosphorus, organic sodium and some trace minerals.

Avocoado


Contain nearly 20 essential nutrients, including fiber, potassium, vitamin E, vitamin b and folic acid.

Fresh Lemon Juice


High in dietary fiber, vitamin C, vitamin B6, calcium, potassium, copper, thiamin, riboflavin, pantothenic acid, iron and magnesium

Homemade Hummus


Protein, calcium, iron, magnesium, phosphorus, potassium, vitamin A, vitamin B, folic acid and a few other trace minerals.

Carrot, Hummus & Avocado Sandwich

This is an easy sandwich to make that is full of flavour and textures. It is so good for you too, which makes it hard to resist. You can use homemade or shop bought hummus to make this sandwich.
Ingredients
  • 2 slices wholewheat bread
  • 2-3 tbsp hummus
  • 1 medium carrot, peeled and grated
  • ½ avocado
  • a squeeze of fresh lemon juice
  • a good grinding of black pepper
Instructions
1. Spread one slice of bread generously with hummus.2. Mash the avocado with a fork. Squeeze over a little lemon juice and mix with the avocado. This will stop the avocado discolouring, but will also add a lovely flavour to the sandwich filling. Spread the soft avocado over the second slice of bread.3. Top the avocado with the grated carrot. Season well with black pepper, then add the hummus coated top slice, face down.4. Cut in half and serve.5. Make mmmmmmm noises as you eat your sandwich.

  1. I cannot abide avocado! It makes me bleurghh, ever since I tasted it whilst weaning my children. I let them both try it even though I didn't like it.

    Still new to thinking vegetarian, I made some felefals the other day, made up some mint yogurt dressing and stuffed some homemade pitta breads with this and some salad. I have to say, it is my absolute favourite at the moment. Even though they are a faff to make. Very yummy indeed!

  2. Better not mention any dead animals on your blog ;p Sooo, my fave veggie sandwich would be egg and cress, I just love egg sandwiches. Your sandwich looks great, I am partial to all of the ingredients and the carrots would give a nice bit of texture to the squishy avocado and hummus.

  4. Looks delicious and healthy! My taste changes from time to time but at present my fav sandwiches are prawn mayo or a good ploughman's.

    1. I have a notion for a ploughmans' sandwich from time to time too. What I really miss is a ploughman's lunch. I haven't had that in a pub for years.

  5. I love huumus and carrot together in a sandwich - especially if the hummus is homemade with lots of cumin in it. Delicious!

    1. I don't usually put cumin in Corina, I prefer coriander, but I have had it with cumin and it was pretty good.

  8. Growing up my favourite sandwich consisted of cheese, spring onion and lettuce. In fact I still really enjoy it.

  10. Well funnily enough, my favourite sandwich is hummous and avocado in a wholemeal pitta. Love the idea of adding in the carrot, though so will definitely give that a try. I think the pittas give me enough texture that I haven't needed the crunch but certainly see that you would need it if using sliced bread instead.
    One of the boys' favourite lunches is hummous with carrots and pitta so I should vary it a bit and try them with one of these sandwiches. Thank you for inspiring a couple of lunches for next week.
