Miso Mushroom Vegan Nut Roast


My latest recipe is the perfect roast for Sunday dinner, a dinner party, or for Christmas dinner.

A hearty miso mushroom vegan nut roast that's easy to make, tasty and filling.

This meatless roast is a healthy, hearty and nutritious option whether you are a vegan, lifelong vegetarian or just trying to add more plant-based meals into your diet.


What is a nut roast?


A nut loaf or nut roast as it is often called, is a traditional vegetarian main dish that became popular in the UK in the 70s.

In 1970s Britain it was one of the few vegetarian or vegan options that could be found on menus and it wasn't always all that good, but more of an afterthought.

Today's nut roasts include a lot more flavour but they still contain the same basic ingredients of nuts, vegetables, spices and breadcrumbs or oats and sometimes seeds and pulses too.

All combined, packed tightly into a loaf tin, and baked, before it is sliced and served.


Is nut roast a healthy option?


Nut roast is a very nutritious and healthy option.

It contains nearly everything you want to include in one dish.

Including protein, fibre, healthy fats, vitamins, minerals and antioxidants.

And of course, it is baked, which is a healthy method of cooking.


Is nut loaf gluten-free?


Most nut loaves are not gluten-free as they contain breadcrumbs or oats.

However, if you make breadcrumbs from gluten-free bread or use gluten-free oats, then the dish is suitable for a gluten-free diet.

What sauce do you serve with nut roast?


Nut roast is often served with a tomato sauce or gravy, which is a popular choice with a Sunday roast.

For this miso mushroom nut loaf recipe, I created a rich red pepper sauce with a gentle kick of spices.

Do try it with the pepper sauce, as it's rather delicious.

What you need to make miso mushroom nut roast


Here are the simple ingredients you need for this mushroom nut roast recipe.

  • olive oil
  • garlic
  • mushrooms
  • miso
  • tomato puree
  • dried thyme
  • walnuts
  • chestnuts
  • oats
  • cannellini beans
  • salt and pepper

Can you use any type of nut to make a nut loaf?


Yes, you can use pretty much any nut to make nut loaf.

I've used walnuts, chestnuts and even salted peanuts.

However, you could also use almonds, brazil nuts or cashews.

If you are buying them, especially for this recipe, then do try the combination or chestnuts and walnuts, but otherwise, just use whatever nuts you have.


What size of loaf tin do you need to make nut roast?


Now here is the thing about loaf tins. They vary in size. 

As a rough guide, a 2 lb (900g) loaf tin is:

  • 21 cm (8 inches) long
  • 11 cm (4 inches) wide
  • 7 cm (2 3/4 inches) high

However, a Great British Bake Off  2lb loaf tin comes in at:

  • 23 cm (9 inches) long
  • 13 m (5 incheswide
  • 7 cm (2 3/4 inches) high

I've used a 2lb loaf tin that's on the generous size, the same height as my mum's old 2 lb loaf tins, but a bit wider and the mixture fitted perfectly.

When I used my mum's old tins, which are also supposed to be 2lb, not all the mixture fitted.

So, you may have a bit of mixture left over if your 2lb tin is on the smaller size.


Does nut roast slice well?


Well, now we are getting into it. Sometimes they slice well and sometimes they are a bit crumbly.

I like my nut loaf a coarse texture, so some slices can be a bit crumbly but I don't mind that.

For a better slice, cut the mushrooms and nuts finer and whizz a third of the oats into a finer flour in a food processor or blender.


Tips for the best nut roast


Here are a few tips for making the best nut roast.

  • Grease your loaf tin well or line it with a loaf tin liner.
  • Chop the ingredients finely and whizz a third of the oats or breadcrumbs into a finer texture or for the oats into a flour, this will give a better slice
  • Press the roast ingredients well into the loaf tin so it is well compressed.
  • Allow to sit for a few minutes before turning out of the tin and another couple of minutes before slicing, for a better slice. 


Can you make nut roast ahead?


Vegan nut roast is the perfect recipe to make ahead.

Make up the mixture and press it well in the tin. 

Then just cover and keep in the fridge ready to bake for 2-3 days.

Just pop in a preheated oven to bake an hour before you are ready to serve up dinner.


Can you freeze nut roast?


Nut loaf freezes really well.

Bake it, leave it to cool, then slice it and freeze in a large freezer bag or tub.

Separate the slices with freezer-friendly baking paper to keep the slices from sticking together.

Bake from frozen on a baking tray covered with foil, as you don't want to brown it any further.

Here are a few tasty ideas for serving a traditional nut roast. 

It's all about the potatoes!

  1. Roast potatoes - with vegetables and red pepper sauce (try these air fryer roast potatoes)
  2. Mashed potatoes - with vegetables and mushroom gravy
  3. Baked potatoes - with baked beans and cheese
  4. Baby potatoes - with roast vegetables and a tomato and basil sauce
  5. Fried potato slices - with grilled mushrooms & tomatoes and baked beans
  6. Potato gratin - try this creamy Mushroom Dauphinoise Potatoes, it's rather special


How to serve leftover nut loaf


Here are a few ideas for serving leftover nut loaf.

  1. Baked potato - topped with crumbled nut loaf, baked beans and cheese
  2. Toastie - crumble in a toastie with cheese and pickle
  3. Wrap - with hummus, sundried tomatoes and salad
  4. Burger bun - in a burger bun with mustard, salad leaves, tomato and ketchup

How to make the mushroom nut roast


A step-by-step photo guide followed by a full printable recipe, so your plant-based nut roast will turn out perfectly every time.

Do feel free to add chilli if you like a bit of heat.


Mushroom Nut Roast - Step 1.

Step 1

  • Grease the loaf tin with vegan butter or spread, or line it with a loaf tin liner.
  • Whizz the beans with the aquafaba (bean water) from the tin, in a blender, food processor or in a jug with an electric stick blender.
  • Set aside.

Step 2

  • In a large pan, saute the olive oil and garlic until soft.
  • Add the mushrooms and cook until soft, seasoning with salt and pepper.
  • Now add the pastes and herbs (full recipe below)

Step 3

  • Add the chopped nuts to a mixing bowl.
  • Then add the mushroom mixture.
  • Finally, add the oats. For a better cut, whizz up a third of the oats into a finer powder.

Step 4

  • Add the bean puree to the mixture and mix well.
  • Add to the greased or lined pan and press down well.
  • Bake in a pre-heated oven.
  • Once baked, leave to stand in the tin for 10 minutes, before turning out, this helps with the slicing.
  • Slice and serve.
  • Enjoy!

Miso Mushroom Vegan Nut Roast

Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, crushed or finely grated
  • 1 onion, finely chopped
  • 400g (14oz) mushrooms, finely chopped
  • 1 ½ tablespoons miso
  • 2 tablespoons tomato puree
  • 1 tablespoon dried thyme
  • 100g (3 ½ oz) walnuts, finely chopped
  • 180g (6 1/3 oz) chestnuts, finely chopped
  • 200g (2 1/4 cups) oats
  • 400g (14oz) tin cannellini beans and the liquid from the can
  • 1 pinch of salt and pepper

Instructions

  1. Grease the loaf tin with vegan butter or spread, or line it with a loaf liner.
  2. Whizz the beans with the aquafaba (bean water) from the tin, in a blender, food processor or in a jug with an electric stick blender. Set aside.
  3. Preheat the oven to 180c/160c fan/350f/gas mark 4.
  4. In a large pan, saute the onion and garlic with the olive oil until soft.
  5. Add the mushrooms and cook them for a few minutes until they are soft too. Season with salt and pepper.
  6. Add the miso, tomato puree, thyme, salt and pepper and mix well.
  7. Cook for another couple of minutes.
  8. Add the chopped nuts to a large mixing bowl.
  9. Now add the mushroom mixture, the bean puree and the oats. For a better slice, whizz a third of the oats into a flour and add that with the rest of the oats.
  10. Mix everything really well, then press into the greased or lined loaf tin until well compressed.
  11. Bake for 1 hour. If it starts to brown too much on top, you can cover with foil to stop it browning further.
  12. Leave to stand in the tin for 5-10 minutes before you turn it out and slice it.
  13. Slice and serve.
  14. Enjoy!

Notes

  • Nuts - Feel free to change the types of nuts to what you have. Walnuts, chestnuts, brazil nuts, almonds, cashews and peanuts are all good options. Choose 2 or 3 types of nuts for a variety of texture and flavour.
  • Loaf Tin - Use a 2lb (900g) loaf tin. They can vary a bit in size, so the mixture may fit or you may have a little leftover.
  • Fridge - Make up the mixture and press it well in the tin. Then just cover and keep in the fridge ready to bake for 2-3 days.
  • Freezer - Bake it, leave it to cool, then slice it and freeze in a large freezer bag or tub. Separate the slices with freezer-friendly baking paper to keep the slices from sticking together.
  • Bake from frozen on a baking tray covered with foil, as you don't want to brown it any further.
