Coconut Island Smoothie

It's Smoothie Time!!

You're gonna love this one!

It's thick, tropical and delicious. It's creamy, but dairy free. It's the perfect smoothie to make today, especially if it's as wet and dreich where you are as it is here in Scotland.

Pineapple, pears, banana, coconut milk and orange juice.

Have I told you recently how much I love my Vitamix recently? It made swift work of this smoothie. Big chunks of fruit thrown in with the other ingredients, hit the button and vvvvvvvvvvvvvvvvvvvvvvvvvv it's smooth in seconds! Fabulous!

So forget the dismal weather and be transported to the sunshine with my smoothie.

Slurp! Slurp! Smile!

Yield: Makes 6 glasses

I am sending my smoothie over to Gill from Tales of Pigling Bland, who is hosting the Breakfast Club for Helen over at Fuss Free Flavours this month.

The theme this month is rocket fuel and what better to give you rocket fuel than a banana?

I suggest drinking this smoothie along with porridge for complete rocket fuel.

I am also sending it to Elizabeth who blogs over at Elizabeth's Kitchen

Elizabeth is hosting this month's No Waste Food Challenge, which was originally set up by Kate from Turqiouise Lemons

The topic this month is fruit and as all my fruit in this smoohtie was sitting in my fruit bowl waiting to be used, it fits in nicely. In fact I think the pineapple was going to start screaming if I didn't use it soon!

Disclosure: Vitamix sent me a Vitamix blender to review. I was not required to write a positive review and any opinions expressed are my own.

  2. Oh yes please! I plan to forget the hideous weather, turn up the central heating and slurp some of this. It's so lovely to think summery thoughts and look at summery ingredients - thank you! :-D

  3. This sounds like a perfect breakfast! I have a pineapple which is currently screaming out to be used so I will be making this for breakfast for myself and the children tomorrow. Can't wait! Thank you for entering this recipe into the No Waste Food Challenge!

    1. That's ok Elizabeth. Hope you love it as much as I do :)

  4. Mmmmmm. This was exactly the kind of thing I was hoping for when I set the challenge. thanks!

  5. Ooh, yummity yum. I love the idea of a coconut milk smoothie - I adore pineapple too. Ooh, I bet it was good and a lovely way to start the day.

  6. Slurp, slurp is right! (I suppose adding rum would just be defeating the purpose, right?)

    1. Mmmmmm, that would be good Barbara for late night adult drinks :)
