An easy recipe for vegan sausage rolls made with beans and lightly spiced.

3 Bean Sausage Rolls 


Don't you just love puff pastry?


I do.

Puff pastry is golden, crisp, buttery and every so satisfying as well as comforting.

2024 UPDATE 

Shrinkflation has hit. Ready rolled puff pastry used to be a standard 375g across big brands and supermarket own brands.

It's now shrunk to 320g (Jusrol, Tesco & Asda, maybe other supermarkets too) which can make a big difference (you end up with too much filling).

So be aware you may need extra pastry or you will have leftover filling (don't try and add it all to these smaller sheets of pastry).

Should I make my own puff pastry?


Hell no, not unless you have lots of free time on your hands. 

I learned how to make puff pastry from scratch at school and it's pretty satisfying, but life's too short and ready-made puff pastry is pretty good quality. 

So if you have the time, make your own puff pastry, otherwise make these Spicy 3 Bean Sausage Rolls with shop bought pastry.

Is puff pastry vegan?


Did I mention they are vegan too? Jus Rol puff pastry is suitable for vegans, so everyone is happy and we love them, but hey it's puff pastry

Making the filling


I gave the beans and spices a few pulses (pulses haha!) in my power blender, but you could just mash them in a bowl. 

Do leave some whole beans, it's gives a better texture.

Now the spices, I didn't make them overly spicy as Cooper was eating them, but feel free to increase the amount of spice you use, if you would like them a bit hotter.

As you can see I served them nursery style with chips and peas.

Are air fried chips any good?

Yes, they are actually and the chips were healthier than usual as I cooked them in another new toy, my Philips Air Fryer from Tesco Direct.

I still can't get over the fact it only takes ½ tbsp of oil to cook enough chips for 4 people. Isn't technology great?

And of course we all had a dollop of ketchup on the side. Shhhhhhh! don't tell anyone!

Spicy 3 Bean Sausage Rolls
Spicy vegan sausage rolls made with a selection of beans and spices all bound up in golden and flaky puff pastry.
Ingredients
  • 1 block Jus-Rol Puff Pastry (suitable for vegans)
  • 400g black beans
  • 400g canellini beans
  • 400g kidney beans
  • 4 tsp ground cumin
  • 2 tbsp nutritional yeast
  • 2 tsp onion granules/powder
  • 1 tsp ground ginger
  • 1 tsp ground coriander
  • 1-2 tsp chilli powder
  • 5 tbsp porridge oats
  • a good grinding of salt and black pepper
Instructions
1. Preheat the oven to 220c/200c fan/425f/gas mark 7.1. Give the beans and spices a few pulses in a blender until partly blended or mash in a bowl.3. Add the oats and mix through.4. Roll out the puff pastry into a rectangle and cut in half. Make sausage shapes with the bean mix, leaving a space around each You should manage 4 sausages on the pastry. Any leftover bean mixture can be frozen and used again.5. Brush a little water around the sausage shapes, then lay the second sheet of pastry on top and seal down the sides. Slice between the sausage rolls and cut each in half.6. Slice into the top of each pastry to let steam out, place on a baking sheet and bake for 20 - 25 minutes until golden.7 Enjoy!

  2. These sound delicious and something I'd definitely give a go if I had all the ingredients on a whim. I'd put them with a salad if I was trying to be abit healthy but I'd keep the big dollop of ketchup because I'm in love with the stuff! (P.s. I'd still prefer chips over the salad, that's just to make myself feel better!)

  4. Fabulous looking "sausage rolls" Jacs, I'd love to eat those! As I'm not a vegetarian, someone said they would use nutritional yeast in my Cheddar & Apple Chutney Soda Bread the other day so does that mean I could use grated cheese instead? Are they similar in taste?
    Well jel of the air fryer too as I spent an afternoon researching them and would love to have one:-)

    1. Yes nutirtional yeast does have a cheesey flavour and you could add cheddar to these and they'd be absolutely delicious. I have to say I am enjoying the air fryer. I'm going to try pastry in it next actually.

  7. These look lovely - I love puff pastry but never think of making sausage rolls because I don't eat meat. I will think again! Is the air fryer good? I've been looking at them but so far haven't bought one because I can't figure out how they work!

    1. You would love these Helen. I am really liking the Philips is has quite a sleek look and really easy to use. You just soak the chipped potatoes in water for a while then pat them dry and pop the in a bowl with half a tbsp of oil and toss, then pull out the drawer and pop them in. Then turn the timer to the time you need and just give them a turn half way through. Really easy and it's a doddle to clean. If you have Tesco vouchers you could put them towards it and you'll get points which is always a bonus.

    1. I know, I was amazed too. I mean that is nothing and I used rapeseed oil with is also super healthy. Less cleaning up also. I am going to try pastry in the frier too.

I made puff pastry at school once but can't remember how it turned out - just remember it being a lot of rolling out - much prefer to buy it and love sausage rolls - haven't made any for ages - highly recommend the liz o'brien's recipe I have on my blog which tastes like the sausage rolls we always had as kids and has lots of protein in it - you can even veganise it with tofu. Love all the beans in these and agree that anything in puff pastry is brilliant

  27. these were delish, except i used 2tsp instead of 4Tbs of cumin, because i used 2Tbs the first time and it was sooo spicy? i also used 1/2tsp of chili powder because mum is a chili wuss.

  29. Made these tonight with fresh beans I boiled, very nice, only problem I found the bean mixture too thick to pulse so I hand mashed it all. Absolutely lovely will defs save this recipe with my other vegan favourites. .
