Apple, Avocado & Mint Smoothie

I have avocados sitting in my fruit bowl, alongside apples and lemons, begging to be used. Most of my fruit is in the fridge, but these guys are just sitting there expectantly.

I am planning to use one of the avocados in a salad with mozzarella, tomatoes and basil, but the other one, I had no plans for. That is until this morning when I decided a smoothie was the order of the day.

Apple, Avocado & Mint Smoothie

3 green apples
3 kiwi fruit, peeled
1 avocado, peeled and stone removed
a squeeze of fresh lemon juice
3 mint leaves

I juiced the apples first. I didn't bother to skin them, just washed them. I am not going to tell you about the incident with the first 3 apples, where I forgot to put the jug under the spout! Needless to say, Graham wasn't impressed.

Next I blended the apple juice, kiwi fruit, avocado and mint with a splash of lemon juice. Not too much as it will overpower the other flavours.

Pour and enjoy.

Serves 2

We really adored this smoothie. It was so rich and creamy thanks to the addition of the avocado. The sharp green smell and flavour of the apple comes first as you take a sip, then you can taste a hint of mint, and next you get a kick from the kiwi. Mmmmmmm! A lovely fresh flavour and such a healthy drink.

I would love to have another glass, alas the apples are finished, thanks to my senior moment.

  1. Looks really good, I love the color green so this smoothie is perfect in that sense. A little nervous about avocado in a smoothie with fruit but if you say so...

    Thanks for the recipe.

  2. Hi Tender B, you can't actually taste the avocado in this smoothie. It just lends the drink a lovely velvety texture, whilst giving you all the lovely nutrients.

  3. First §i have to comment on the photo - it's so beautiful and dramatic! I know the smoothie was deliciou, but I still have trouble using avocado this way. A friend made me avocado ice cream and it was amazing, but I couldn't bring myself to make some!

  7. As much as i adore avocados ( I always have some at home), I have not yet tried a smoothie with it. I bet it will change the texture completely to silky.. I have heard of avocado ice cream too, tho i have never tried one. being pretty flavorless by itself, i think it lends a lot to the creamy texture.right?

  8. You are right Soma, you get the creamy richness, but the other flavours are quite distinct, so all you taste is the apple, kiwi, mint and lemon.

  9. This is a fun idea! I am sure it was most refreshing. That's too funny about the apples! Ooooops! We all have our kitchen mishaps from time to time. Not too long ago, I carelessly set down a bottle of expensive olive oil that ended up toppling over onto the floor and well, it's not fun to clean up as you can imagine!

  10. oh yum - mint is something I should try in my smoothies - I can see the little buds in my pots that I hope will spring forth into life soon - I have tried a similar combination with spinach if you want to up the iron levels!

Hi Johanna My mint is growing madly just now with all the rain, luckily it is contained.

It was Diann and I will be making it again, once I have more apples.

It is so good Ricki, I am going to make some more this morning, now that I have stocked up again.

Hi Dana, I am new to trying this, but I will certainly be adding them more often to my smoothies.

This may get you over your dislike of avocadoes Pia, you will get all of the goodness, but won't be overwhelmed by them.

It was a eureka moment Alex :)
