Microwave Apple Sponge Pudding

This easy mug cake is a traditional British apple sponge pudding that's made in minutes. It's gorgeous served with ice cream, cream or custard. This dessert is suitable for vegetarians and vegans, just use your regular milk.

MICROWAVE MUG CAKES


Mug cakes are wonderful things.

They are quick cakes for one,  pulled together in a couple of minutes and zapped in the microwave to produce the most fabulous light cakes and moist puddings.

It's like a little bit of magic.

Especially when you compare it to all the prep, ingredients, waiting, cooling and washing up that comes with a standard size cake.


APPLE SPONGE PUDDING


Apple sponge pudding is a traditional British pudding.

It is also called Eve's Pudding or Mother Eve's Pudding.

It's basically a Victoria sponge type pudding baked over cooked apples.

What's not to love? Especially when it's served with vanilla ice cream or custard.

MICROWAVE APPLE SPONGE PUDDING

This microwave apple sponge pudding is quick to make and results in a light and fluffy, cinnamon flavoured sponge with a base of sweet cooked apples.

It's a generous dessert for one and all you have to wash up is a measuring spoon, a tea or dessert spoon and a mug.

It's delicious!

There's absolutely no downside to this dessert.

MICROWAVE SETTINGS

Microwaves all vary in strength, so your pudding might be ready a little earlier than mine or need a bit longer.

To test it, press your finger lightly on the top of the sponge. It should be springy.

If some wet mixture sticks to your finger, it needs a little longer.

Simples!

COOKED APPLES

I used apple sauce from a jar for this pudding. 

It's a handy thing to have in your store cupboard. As well as making this pudding, it's great served on porridge in the morning, on yoghurt or served with ice cream.

You can also lightly cook a chopped eating apple in a little sugar and water in the microwave if you don't want to use apple sauce or apple pie filling.


GROUND CINNAMON

I used ground cinnamon to flavour this sponge. 

You can skip this flavouring, but if you would like a warming spice, but you don't like cinnamon, try ground ginger instead.

HOW TO SERVE APPLE SPONGE PUDDING


  1. CUSTARD - If you are serving this pudding with custard, butter the mug before adding your ingredients, then when it is cooked, loosen the edges with a knife and turn out onto a dessert plate or bigger dessert bowl, then top with warm custard.
  2. POURING CREAM - The same as for custard, butter the mug, loosen and turn out before pouring over the cream.
  3. SQUIRTY CREAM - Serve it in the mug, topped with a generous swirl of squirty cream.
  4. VANILLA ICE CREAM - Serve it in the mug, topped with small dollops of ice cream.
  5. ICING SUGAR - You can also serve it plain with just a dusting of icing sugar.
Custard, pouring cream, squirty cream and vanilla ice cream are all available as dairy or dairy-free. Choose depending on your diet.

We like Alpro custard and single cream, Tesco dairy-free squirty cream (in a black can) and Swedish Glace dairy-free vanilla ice cream, but there are lots of options out there.

HOW TO MAKE MICROWAVE APPLE SPONGE PUDDING

STEP 1

Add flour, sugar, baking powder, salt and cinnamon to a bowl and stir.

You can mix this up in your mug and plunge the apples in at the end instead of pouring the cake mixture over it.

STEP 2

Now add a plain flavoured oil like vegetable oil, milk and vanilla extract.

Mix well. I used my son's mini whisk, but to be honest a fork would do.

Add the apples to the mug, then top with the cake batter and microwave.

If you've mixed up your batter in the mug, push the apples under the batter.

Microwave Apple Sponge Pudding

This easy mug cake is a traditional British apple sponge pudding, made in minutes. Great served with ice cream, cream or custard. This dessert is suitable for vegetarians and vegans, just use your regular milk.
Prep time: 2 MCook time: 1.5 MTotal time: 3 M

Ingredients:

  •  3 tbsp plain flour
  • 1 tbsp caster sugar
  • ½ tsp baking powder
  • ¼ tsp ground cinnamon
  • a pinch of salt
  • 1 tbsp oil
  • 3 tbsp milk (whatever milk you have)
  • ¼ vanilla extract
  • 2 tbsp apple sauce

Instructions:

  1. In a small bowl mix together all the dry ingredients.
  2. Add the oil, milk and vanilla extract and whisk into a batter.
  3. Spoon the apple sauce into your mug and top with the cake batter.
  4. Microwave for 1½ minutes.
  5. Enjoy!

Notes:

You can mix the cake batter in your mug and push the apple sauce under the batter at the end before cooking.   15. Looks delicious - we loved apple sponge as kids and my mum still makes it but I have never thought of it in a mug - we are quite into mug cakes lately and today I tried your mac and cheese in a mug which was lovely and creamy.
