EASY VEGAN CINNAMON WAFFLES

These cinnamon waffles have become very popular in my house over the last few months. Everyone gets very excited when I mention waffles.

Even the dogs have added the word to their vocabulary and run straight to the kitchen when they are mentioned. Those little smarty-pants know they get to share the first waffle.

Waffles are like pancakes, the first one is a trial and never the best one.

This recipe is super easy and quick to whip up and the waffles have a wonderful sweet cinnamon flavour.

Don't they look good?

DAIRY-FREE AND EGG-FREE WAFFLES

Waffles don't need to have either eggs or dairy milk to be light, fluffy and delicious.

I use oat milk and include a little vinegar to give that buttermilk effect. You can use whatever milk you regularly buy.

These are soft, fluffy and deliciously vegan.

HOW TO GREASE A WAFFLE MAKER

It's important to grease your waffle maker so that the waffles don't stick.

Many people melt butter or dairy-free spread and brush it on with a pastry brush.

That's way too much faffing about!

I use spray sunflower oil to grease my waffle maker, but you could also use cake release spray, which would work equally well.

WHICH WAFFLE MAKER?

There are many types of waffle makers or waffle irons, as they are also called to choose from.

I love my waffle maker.

It's a circular Sage No-Mess Waffle Maker.

WHY DO I LIKE THE SAGE WAFFLE MAKER?

  1. It's small so it doesn't take up much room and it can be stored upright on it's side to take up even less room.
  2. It has a channel around the edge to catch any overflowing waffle batter. This is an important feature as it's easy to overfill the waffle maker.
  3. You can choose how light or dark you want to grill.
  4. It has a light to tell you when it's hot and ready to use.
  5. It beeps once the waffle is cooked (how cool is that?)
I also use if for grilling tofu, which comes out so crisp at the edges, but chewy inside. It's perfect for adding to sandwiches, wraps and toasties or just eating as a snack.

Who knew a waffle maker could be so handy?

I did wonder when I got it, if it would end up at the back of a cupboard, but no I do use it.

HOW TO REMOVE THE WAFFLE

Sage suggest using a plastic spatula as the waffle maker is non-stick.

I have to admit I have never tested the non-stick nature of my waffle maker. What a coward I am.

Me, I use a fork to prong and remove my waffles.

  2. Serve with a dusting of icing sugar
  3. Serve topped with a drizzle of maple syrup
  4. Serve topped with slices of banana and maple syrup
  5. Serve topped with berries and squirty cream
  6. Serve topped with a dollop of vegan vanilla ice cream (we love Swedish Glace)

BREAKFAST WAFFLES

These waffles are perfect for breakfast or brunch and they don't take long to make.

If you want to prepare them the night before. Add the milk, oil and vinegar to a container with a lid and pop in the fridge. Add the dry ingredients to a bowl or jug and cover overnight. I can just sit on your worktop.

In the morning pop your waffle maker on to heat,  mix together the wet and dry ingredients and grab some plates and the maple syrup.

It will only 3 or 4 minutes for each waffle to cook.

Making Cinnamon Waffles - step 1 - dry ingredients

STEP 1 - DRY INGREDIENTS

In a jug or bowl, add the vinegar to the milk and set aside.

Add flour, sugar and salt to a mixing bowl.

I used caster sugar and some demerara sugar, but you can skip the demerara sugar.

Making Cinnamon Waffles - step 2 - cinnamon

STEP 2 - CINNAMON

Next add the cinnamon and the baking powder.

If you are using self-raising flour you don't have to add baking powder.

Making Cinnamon Waffles - step 3 - mix

STEP 3 - MIX

Mix the dry ingredients well before you add the wet ingredients.

If you are making up the waffle mix the night before, cover the bowl and set aside.

Making Cinnamon Waffles - step 4 - wet ingredients

STEP 4 - WET INGREDIENTS

Add the milk (with the vinegar) and oil to the dried ingredients.

Mix well.

Making Cinnamon Waffles - step 5 - you're ready to waffle

STEP 5 - READY TO WAFFLE

Once it's mixed it's ready to waffle.

Don't worry though if you are waiting for everyone to arrive for breakfast or if you have to go off to do something else, you can set it aside or pop it in the fridge for up to an hour.

Once you are ready, pour into your heated waffle maker.

Don't overfill your waffle maker, it's ok to have some areas at the edge of the waffle maker plate with not waffle batter as it does spread and rise.

Enjoy!
