 A quick and sumptuous banana pudding with a layer of custard. This mug cake is super simple to make. Suitable for vegetarians and vegans (just use your regular milk and favourite custard).

MICROWAVE BANANA CUSTARD PUDDING (QUICK MUG CAKE)

Just look at that light and fluffy sponge.

This mug cake, or maybe I should say mug pudding is a triumph!

Warm creamy custard, topped with sliced banana, a light sponge layer, then finished with more banana.

Made in minutes.

It's fabulous served hot with a dollop of vanilla ice cream.


MUG CAKES

Mug cakes are fabulous. They are so easy to make, even the most nervous cook can make them and they are great for kids to make too.

My son and husband love these and my husband who is not often seen in the kitchen when food is being made has taken over the job as chief mug cake maker. 

I think he feels rather accomplished at making them now.


SO WHY ARE MUG CAKES SO GOOD?


  1. They are quick to make.
  2. They are easy to make.
  3. They are quite frugal. You are only using the smallest amount of ingredients.
  4. They are a generous serving for one.
  5. There's no going back for just another slice or portion, which can be too tempting if you have a whole cake or pudding just sitting there calling out to you.
  6. Less washing up, a bowl, a measuring spoon, a knife to slice the banana and a mug.
  7. You don't have to get the measuring scales out, a measuring spoon is all you need.
  8. You use less energy (gas or electric).
  9. It feels like a little bit of magic when you add a bit or this and a bit of that and a minute or two later have a luxurious cake or pudding.

CUSTARD


Ready-made custard is perfect for this pudding.

We use cartons of Alpro custard, which is dairy-free and egg-free. It's the best vegan custard we've tried.

Once it's opened you can just pop it in the fridge and use it up over the next couple of days.

You can use your favourite ready-made custard, either dairy or dairy-free, depending on your diet.

The custard is on the bottom of the pudding. You spoon through layers of banana and vanilla sponge to the creamy custard layer beneath.

There's not much prep needed for the banana.

Just slice it and layer it through the pudding. 

A small banana will do, but if not just nibble on any leftover banana while the pudding bakes.

DON'T LIKE BANANA OR WANT TO TRY ANOTHER FLAVOUR?


If you don't like banana or want to mix it up you could replace the banana with one of the following:

  • Blackberries
  • Blueberries
  • Chocolate chips or grated chocolate
  • Coarsely grated apple
  • Frozen berries
  • Mango
  • Pineapple
  • Raisins
  • Raspberries
  • Sliced pear

WHAT YOU NEED TO MAKE A MICROWAVE BANANA CUSTARD PUDDING



MUG PUDDING EQUIPMENT


  • A microwave (duh! I felt a bit stupid adding that!)
  • A microwave-safe mug (it should say on the base)
  • A tablespoon
  • A teaspoon
  • A bowl to mix the cake mix in (a small bowl will do) 

MUG PUDDING INGREDIENTS


  • 1 small banana
  • Ready-made custard (veggie or vegan)
  • Plain flour
  • Baking powder
  • Sugar
  • Salt (just a pinch)
  • Vegetable oil (or another mild oil)
  • Milk (I use oat milk, but you can use your regular milk)
  • Vanilla extract (not essence, never essence, it's nasty stuff)

WHAT TYPE OF MUG SHOULD I USE?


It needs to be microwave safe, turn it upside down and look for the words microwave-safe or the wee microwave symbol.

It needs to be large. 

The type of mug you would use for soup or hot chocolate. I'm talking a really generous sized mug. You don't want it to spill over in the microwave.

If you don't have a large mug, you could use a small bowl. Just make sure it's microwave safe.


HOW POWERFUL IS MY MICROWAVE?


Microwaves vary quite a lot.

My microwave is 800w, but your microwave may be less or more powerful.

This pudding will take 1-2 minutes to bake in the microwave.

When it's ready it will have increased in size and be springy to the touch. If it's still wet on top, it needs longer.

Check after a minute and give it a little longer if it needs it.

HOW TO SERVE BANANA CUSTARD PUDDING?


First off, let it sit a minute, you don't want to burn your mouth. That would not be a good start.

  1. It's good served as it is. After all it's got the custard built in. Just dig deep and get some custard with each spoonful of pudding.
  2. You can also serve it with vanilla ice cream (dairy or vegan). We like Swedish Glace.
  3. Or why not serve it with squirty cream (dairy or vegan).

HOW TO MAKE MICROWAVE BANANA CUSTARD PUDDING

Microwave Banana Custard - Step 1 (dry ingredients and oil)

STEP 1

  1. In a small bowl or jug add the flour, baking powder, sugar and salt.
  2. Mix well.
  3. Add the oil.


Microwave Banana Custard - Step 2 (milk and vanilla added to mix and custard to mug)

STEP 2

  1. Add the milk and vanilla extract.
  2. Mix well into a batter.
  3. Now spoon the custard into the mug.


Microwave Banana Custard - Step 3 (pudding layered up)

STEP 3

  1. Add a layer of banana slices to the custard.
  2. Top with the pudding batter.
  3. Now another layer of banana slices.
  4. Microwave for 1-2 minutes until the pudding is springy to the touch but not wet.

Microwave Banana Custard Pudding

A quick but sumptuous banana pudding with a layer of custard. This mug cake is super simple to make. Suitable for vegetarians and vegans, just use your regular milk and favourite custard.

Ingredients

  • 1 small banana, sliced
  • 4 tbsp custard (more if you like, dairy or vegan)
  • 2 tbsp plain flour
  • 2 tbsp sugar
  • 1/4 tsp baking powder
  • small pinch of salt
  • 2 tbsp milk (dairy or vegan)
  • 2 tsp oil
  • 1/4 tsp vanilla extract

Instructions

  1. Add the dry ingredients to a small bowl or jug and mix.
  2. Add the oil, milk and vanilla extract and mix into a batter.
  3. Add the custard to the mug and top with half of the banana slices.
  4. Top with batter and then the rest of the banana slices.
  5. Microwave for 1-2 minutes until springy to the touch but not wet.
  6. Let stand for a minute before serving.
  7. Enjoy!

Notes:

You can use dairy or vegan custard and milk to make this pudding.

Make sure your mug is large and microwave safe.

Your microwave may bake this anywhere from 1 minute to 2 minutes, depending on how powerful it is.

It should be springy to the touch and not wet when baked.

Serve as it is or with vanilla ice cream or squirty cream (dairy or vegan).
