Microwave Golden Syrup Sponge Pudding (vegan mug cake)


My family are mad for mug cakes. They love them.

Of course, I'm always happy to oblige as they are so easy and quick to make and perfect if you have a sweet tooth.

Microwave sponge cakes are perfect for a late night craving too.

This is my best mug cake yet!

It makes a really generous portion size for one.

And a really easy recipe.

Soft and fluffy vanilla sponge with a rich, toffee sauce thanks to the golden syrup.

Mmmmmm!


Microwave Golden Syrup Sponge Pudding with Vanilla Ice Cream

2 Minute sponge pudding


This crazy good sponge pudding bakes in the microwave in 2 minutes.

Just look at it!

The sponge is so fluffy and that sticky, syrupy sauce sinks right through the pudding to the bottom, so you get some toffee syrup with every spoonful.

It takes a couple of minutes to make the batter and syrup, then a couple of minutes to bake.

This vegan mug cake recipe is like magic!

And it's lighter than a treacle sponge pudding, but just as luxurious and gorgeous with a scoop of ice cream.


Is this a treacle sponge pudding?


Technically, it's not a treacle sponge pudding as it's made with golden syrup instead of dark black treacle (molasses).

However, often when people talk about a treacle sponge pudding or you are offered one in a bar or restaurant, it can be this lighter version made with golden syrup.

It's just one of those odd British things.

But don't worry, either are delicious, so don't be upset if it's not quite what you were expecting.

Microwave mug cakes & puddings


If you've not tried mug cakes or puddings yet, you really should.

All you need is a large microwave-proof mug and a few basic ingredients.

You don't need scales either, just a spoon to measure out and mix the ingredients.

They taste just as good as full-size puddings or cakes, but they are super quick.

They are awesome! The best thing!

Golden Syrup Sponge Pudding in a Glass Mug

Self-saucing pudding


This is a self-saucing pudding.

They are sometimes called a magic pudding too.

If you've not heard of them before, have a look at my Dark Chocolate Magic Pudding. It's a full size chocolate pudding, but the technique is the same.

So how does a self-saucing pudding work?

You make your cake batter, add it to the baking dish, then you pile the sauce ingredients on top.

Now the crazy bit.

You pour boiling water over it!

That's right, boiling water.

Once it's baked the sauce has magically appears at the bottom of the sponge.

You just have to hold your nerve and believe me when I tell you it works.

Why is microwave golden syrup sponge pudding so good?


You will LOVE this sticky syrup pudding if you try it. 

You can't beat at good mug cake.

Here are some reasons why.

  1. It's a quick treat, super quick!
  2. It's very easy to make, anyone can make it from the more experienced cooks and bakers to those who are not confident in the kitchen.
  3. It's easy for kids to make by themselves (just tell them to take the mug out by the handle so they don't burn their fingers and let it cool for a couple of minutes before eating it).
  4. There are no fancy ingredients.
  5. You don't need any special equipment or dishes to make this sponge pudding.
  6. It's cheap! You only use a little of each ingredient.
  7. It's a generous portion for one. 
  8. You won't have lots of leftover pudding you wonder what to do with or pudding that will tempt you.
  9. There's hardly any washing up, just a mug and two spoons!
  10. It tastes blooming' amazing!

What you need to make microwave golden syrup pudding


This pudding is super easy to make and you don't need any fancy ingredients or equipment.


Equipment

Here's the simple list of equipment you will need to make these vegan mug cake puddings.

  • A large microwave-proof mug
  • Tablespoon
  • Teaspoon

Ingredients

Here are the basic ingredients you will need.
  • Plain flour - all-purpose flour
  • Caster sugar
  • Baking powder
  • Salt - just a pinch
  • Oat milk - or your regular milk
  • Vanilla extract - extract is much nicer than vanilla essence, which is artificial
  • Vegetable oil - or another mild oil
  • Brown sugar - or demerara sugar
  • Golden syrup
  • Boiling water

Don't get all sticky with the golden syrup


Golden syrup is really sticky stuff and you and your kitchen can get in a sticky mess when you are baking with it.

I bet you know exactly what I mean!

So my tip is to rub a little oil over your spoon before you either dip it into the tin of golden syrup of squeeze the syrup out of a squeezy bottle.

The syrup will slide right off it, so less chance of getting sticky.

Can you use maple syrup?


Golden syrup gives the most wonderful caramel flavour, that you won't get from maple syrup.

However, if you can't get hold of golden syrup, you could use maple syrup for this microwave sponge pudding.

Not quite as good but still tasty.


Which type of mug is best?


You need a microwave-safe mug to make mug cakes and puddings.

I love my glass panda mug.
But before using a mug, check the base to check if it is suitable to be used in a microwave.
As well as making sure it's microwave safe, you also want to make sure the mug is big enough.
So choose your largest mug.
The one you would grab if you were going to make yourself a cup of soup or a big mugful of hot chocolate or cocoa.

Microwave power


The power can vary dramatically between different microwaves.

My microwave is 800 watts. 

Yours may be a bit less powerful or more powerful than mine and may need a little more or a little less time. 

Cook time can vary slightly from microwave to microwave so you can get different results and may need to give your mug cake a bit more or a bit less time.

After you make it the first time, if it's not perfect, you can tweak it the next time by changing the cooking time a little.

The sponge is ready if it is springy to the touch, but don't use your finger to test it, use the back of a teaspoon. The toffee syrup will be very, very hot.

How to serve golden syrup sponge pudding



Now wait a minute, don't just dig your spoon in, no matter how tempting the pudding looks.

Think about how to serve it.

Here are some ideas.

  1. A scoop of vanilla ice cream (we like Swedish Glace, which is suitable for vegans.
  2. Pouring vegan cream.
  3. Vegan squirty cream.
  4. Warm vegan custard.
  5. A dollop of whipped vegan double cream (Elmlea Plant Double Cream is supposed to be good, I've bought some but not tried it yet)
  6. A dollop of vegan banana ice cream.
  7. Naked, on its own, without a topping.

How to make vegan golden syrup sponge pudding

Microwave Golden Syrup Sponge Pudding - Step 1 - Dry Ingredients

STEP 1


Add the dry ingredients to a large mug. Make sure the mug is microwave-proof.

Add plain (all-purpose) flour, baking powder, sugar and salt.

Now add the wet ingredients.

Milk and vegetable oil.

I use oat milk, but you can use your regular milk and any mild oil.

Add the vanilla extract and mix the ingredients into a smooth cake batter. That's your cake mix ready.

Top the cake batter with brown sugar.

Drizzle golden syrup over the brown sugar.

Pour boiling water over the pudding. I know it sounds crazy, but trust me it will work.

Bake in the microwave for 2 minutes.

Serve with vegan vanilla ice cream.

Microwave Golden Syrup Sponge Pudding (vegan mug cake)

Ingredients

  • 4 tablespoons plain flour
  • 2 tablespoons caster sugar
  • ½ teaspoon baking powder
  • a pinch of salt
  • 3 ½ tablespoons oat milk (or your regular milk)
  • 1 tablespoon + 1 teaspoon vegetable oil (or any mild oil)
  • ½ teaspoon vanilla extract
  • 2 tablespoons brown sugar
  • 2 tablespoons golden syrup
  • 2 tablespoons boiling water

Instructions

  1. Add the plain flour, caster sugar, baking powder and salt to a microwave-proof large mug.
  2. Add the milk, oil and vanilla extract to the dry ingredients.
  3. Mix well into a smooth batter.
  4. Add the brown sugar in a layer over the cake batter.
  5. Drizzle the golden syrup over the brown sugar.
  6. Pour the boiling water over everything.
  7. Microwave for 2 minutes.
  8. Leave to cool for a couple of minutes, then serve with your choice of topping. I love it with vegan vanilla ice cream.
  9. Enjoy!

Notes

  • Make sure you use a large mug, the type you would use for hot chocolate or soup.
  • Make sure your mug is suitable for use in the microwave.
  • My microwave is 800 watts. Yours may be a bit less powerful or more powerful than mine and may need a little more or a little less time.

    1. Doesn't sound like it's cooked unless you made a mistake with the measurements. Be careful measuring and try cooking for longer. If it is raw it is uncooked.

  18. Omg this was amazing and so easy to make. Never seen a recipe with boiling water poured over the top before. GENIUS! Used a small Pyrex dish and cooked for 1 min 45, as my microwave is more than 800W. A bit too much sugar / syrup for my taste, so will half it next time. Thank you :-)
