Vegan Boursin Roasted Veg Pasta Sauce



When you have a fussy eater in the family, be that your child or your partner, sometimes you have to be sneaky to get extra veg into their diet.

In my case, it's my son, who leaves way too much veg on his plate when I add it to pasta.

So, I created this vegan Boursin roasted veg pasta sauce which is made with roasted vegetables that are blended into the most delicious smooth, creamy pasta sauce.

I managed to cram in 4 different vegetables, just using what I had in the fridge, but I could have added more.

This creamy pasta is made with vegan Boursin cheese, but if you're veggie, you can use the standard Boursin garlic and herb cheese.

If you can't get hold of it (Asda usually sells it), you could use another vegan herb and garlic cheese (I like Tesco's own brand) or plain cream cheese and mix in garlic powder and some dried herbs to flavour it.

I've made this with Boursin and the Tesco herb and garlic cream cheese and both work well to add flavour and a wonderfully creamy finish to this easy pasta sauce.

This is the perfect vegan Boursin cheese recipe, but also try my vegan Boursin pasta with cherry tomatoes, which is also delicious.

What you need to make this creamy roast veg pasta


Here are the simple ingredients you need to make this creamy vegan pasta.

  1. Pasta 
  2. Olive oil
  3. Red pepper
  4. Aubergine (eggplant)
  5. Courgette (zucchini)
  6. Cherry tomatoes
  7. Tomato puree
  8. Oregano
  9. Chilli flakes
  10. Salt & pepper
  11. Vegan Boursin (or other herb and garlic cream cheese)
  12. Oat Milk
Also, Fresh basil to serve (optional)

This roasted vegetable pasta is suitable for vegetarian, vegan and dairy-free diets.


Other veggies you could use



This is a great sauce for using up veg in your salad drawer or any you have picked up cheaply from a supermarket or market.

Basically, you can use any vegetables that roast well.

Here are some ideas:

  • Broccoli
  • Butternut squash
  • Carrots
  • Cauliflower
  • Parsnips
  • Red onions
  • Sweet potatoes

You could also turn this dish into a vegetable pasta bake by adding extra roast vegetables and chickpeas, then top it with vegan cheese and bake in the oven or air fryer until the cheese is melted and golden.

Which type of pasta shape works with this creamy vegan sauce?



Conchiglie, also known as shell pasta is a fun shape to use, as the sauce coats it beautifully, but here are a few more pasta shape ideas.
  • Penne - short tube-shaped pasta
  • Fusilli - spiral-shaped pasta
  • Farfalle - bowtie-shaped pasta
  • Rigatoni - ribbed tubes of pasta
  • Rotini - tighter spiral-shaped than fusilli
  • Spaghetti - long strands of pasta

Other ways to use this creamy roast veg sauce


This family-friendly smooth pasta sauce is luscious when tossed through shell pasta, but it's a versatile sauce and can be used in other ways.

Here are a few ideas for serving this delicious creamy plant-based sauce.

  1. Burritos - spread on flour tortillas, then top with rice, beans, salsa and avocado, then wrap and grill until crisp
  2. Dip - use as a dip for crunchy veg and breadsticks
  3. Lasagne - use this sauce with roast veg to make a Mediterranean lasagne
  4. Pizza - use this as a pizza sauce before adding your favourite toppings and vegan mozzarella
  5. Salad - drizzle over a roast veg and chickpea salad
  6. Stuffed peppers - mix rice and finely chopped veg with this sauce then top with vegan cheese and bake
  7. Tacos - drizzle this sauce over filled tacos, then top with crumbled vegan feta
  8. Wraps - use this sauce on wraps before adding tofu and salad
Kids will love this easy sauce and it's a great way to get an extra portion of veg in them.

How long will this roast veg pasta sauce keep?



Once cool, store this healthy pasta sauce in an airtight container in the fridge for 3-4 days, then reheat before tossing through freshly cooked pasta.

You can also freeze this sauce.

To defrost, take it out of the freezer and leave it in the fridge overnight, then reheat it.

How to make this creamy veg pasta


A step-by-step photo guide followed by a full printable recipe so you can fully enjoy this delicious vegetarian creamy pasta.

Do feel free to add chilli if you like a bit of heat.

Vegan Boursin Pasta - Step 1.

Step 1

  • Preheat the oven
  • Add the chopped vegetables to a roasting tin
  • Add the herbs and spices, then season.
  • Then add a drizzle of olive oil and toss.
  • Spread into a single layer and roast until browning at the edges.

Vegan Boursin Pasta - Step 2.

Step 2

  • Cook the pasta until al dente.
  • While the pasta is cooking, add the roast veg to a food processor or blender with the other ingredients and whizz until smooth (full recipe below).
  • Add a good splash of pasta water to loosen the sauce and whizz again.
  • Toss the sauce through the freshly cooked and drained pasta, then top with fresh basil (optional) and vegan-style parmesan or grated vegan cheddar.
  • Enjoy!

Vegan Boursin Roasted Veg Pasta Sauce

Vegan Boursin Roasted Veg Pasta: a family-friendly, plant-based smooth pasta sauce. Packed with nutritious roast veggies & creamy Boursin. Perfect for vegans & non-vegans.

Ingredients

  • 400g (14 oz or 4 cups) shell pasta
  • 1 tablespoon olive oil
  • 1 ½ red peppers (you could use 2), cut into chunks
  • 1 aubergine (eggplant), chopped
  • 1 courgette (zucchini), chopped
  • 12 cherry tomatoes
  • 1 teaspoon dried oregano
  • ½ teaspoon chilli flakes (more if you want a proper kick)
  • 1 pinch salt and pepper
  • 2 tablespoons tomato puree
  • 4 tablespoons vegan Boursin (or other vegan herb and garlic cream cheese)
  • 4 tablespoons oat milk (or your regular milk)
  • 2 tablespoons (pasta) water

Instructions

  1. Preheat your oven to 180c/160c fan// 350f/ gas mark 4. You could use an air fryer but you would have to cook the vegetables in batches.
  2. Add your chopped vegetables to a large baking sheet (or two).
  3. Add the oregano, chilli flakes, and salt and pepper, then add a drizzle of olive oil and mix well to coat.
  4. Spread in a single layer, then bake for 20-25 minutes until soft and charred at the edges.
  5. Cook your pasta according to the packet instructions and drain.
  6. While the pasta is cooking add the roast vegetables to a blender or food processor with the tomato puree, Boursin, and milk, then blend until smooth.
  7. Add the pasta water and blend again, then toss through the pasta and serve topped with fresh basil and vegan cheese (optional).
  8. Enjoy!

Notes

  • Which veg - You can use any veg you need to use up.
  • Extra veg - Why not roast extra veg to add to the pasta or to use in sandwiches or wraps the next day?
  • Pasta Bake - Make into a pasta bake by adding chickpeas, extra toast veg, then top with cheese and bake until golden
  • No Vegan Boursin - If you can't find vegan Boursin, use vegan herb and garlic cream cheese or mix garlic powder and dried herbs into plain vegan cream cheese instead.
  • Store - Once cool, store this healthy pasta sauce in an airtight container in the fridge for 3-4 days, then reheat before tossing through freshly cooked pasta.
  • Freeze - You can also freeze this sauce. To defrost, take it out of the freezer and leave it in the fridge overnight, then reheat it.

    1. Haha yes it is good and it's great in a pasta sauce. Don't put the vegan version in the oven though as it doesn't like it. Always use it fresh.
