Air Fryer Roasted Tomato Spaghetti Sauce


Super quick spaghetti sauce that tastes so fresh, but is full of flavour.

This air fryer roasted tomato spaghetti sauce is cooked in the air fryer while the pasta cooks.

So, it's perfect for a quick weeknight dinner with all the flavours of Italy.

I think you'll love it too.


Why air fry the pasta sauce?


If you have an air fryer, you probably know the answer to that question.

It's much more convenient to use, especially for a small quantity, like this Italian tomato sauce.

Why turn the oven on to heat, if you can avoid it?

The air fryer is quick and efficient and it uses less energy, which is always a consideration when energy prices are so high.

Of course, if you don't have an air fryer, you can cook this delicious tomato sauce in the oven and just give it a few minutes longer to cook.

Are air fryers that good anyway?


Air fryers are absolutely bloomin' brilliant!

We love ours and use it at some point every day.

  • It makes the most amazing toast and cheese toasties and is great for grilling wraps until they are crunchy.
  • You can cook frozen food in it like onion bhajis, burgers and sausages, not to mention the ubiquitous chips.
  • It's great for crisping up falafel and spring rolls.
  • You can grill tofu in it to add to stir-fries or wraps.
  • Roast vegetables to add to pasta, salads, sandwiches or wraps.
  • Baking is quicker in the air fryer too. I bake muffins, sconescookies and flapjacks in mine.
  • Puddings too, don't forget the puddings. Have you tried my sticky parkin (gingerbread) with custard.
  • I use it to make kale chips or homemade tortilla chips for snacks.
  • Crispy chickpeas are another air fryer treat.
  • It's perfect for baking potatoes and sweet potatoes (although I pop white baking potatoes in the microwave for 10-15 minutes first to soften them, then let the air fryer crisp them up).
  • I make homemade vegan pepperoni in it and crispy tofu nuggets.
  • The most delicious homemade garlic bread! Drool!
  • Homemade falafel bake up a treat too.
  • Oh and not to forget cheesy caulflower 'steaks'. They are lush!
  • Least, but not last, I make crispy roast potatoes for Sunday dinner in it.
So many more things, that I have probably forgotten.

It's just such an essential bit of kitchen kit. I couldn't do without mine now.

I always feel safer with my son using it instead of the oven too, as he's less likely to burn himself.

My air fryer is the type with shelves, which (after having one with a drawer) I find more useful and versatile on a day-to-day basis.

Mine is a Tower 5-1 Air Fryer, which I can highly recommend.

What you need to make air fryer pasta sauce



Here are the simple ingredients you need to make the best spaghetti sauce.

  1. Olive oil - or rapeseed oil
  2. Ripe tomatoes
  3. Garlic powder - or fresh garlic crushed or finely grated
  4. Oregano - dried is fine
  5. Salt & pepper - to season
  6. Balsamic glaze (optional) - for a bit of added sweetness

Tips for ripening tomatoes


Never, ever put tomatoes in the fridge!

That's a good place to start, as storing them in the fridge really weakens the flavour and halts the ripening process.

To allow your large tomatoes (salad or beef tomatoes) to keep ripening, pop them in a bowl on your kitchen windowsill, so they will get the sun.

They will ripen up and darken beautifully while developing more flavour.

The only exception to this tip is baby tomatoes like cherry tomatoes or baby plum tomatoes.

Keep them in the fridge as they spoil quickly when left out.

To get the best flavour out of those take them out of the fridge half an hour before you need them to allow them to come to room temperature, which will improve the flavour.

How do you cook the tomatoes?


This sauce can be made in a drawer-style or shelf-style air fryer (or oven if you don't have an air fryer).

If you have the drawer style, you can cook the tomatoes directly in the drawer.

Have an air fryer with shelves

That's ok too, you can pop the tomatoes in an ovenproof dish that fits on the shelf.

I have a square glass Pyrex dish that's 20 x 20 cm (8 x 8 inches) that fits in mine perfectly and is great for sauces or puddings and of course for roasting tomatoes for an easy air fryer sauce.

Pasta water


Reserve some of your pasta water towards the end of the pasta cooking time.

It's full of lots of lovely starch released by the pasta.

Add it to the sauce when you are blending it for a thick silky finish.

It's a great tip.

All the Italians do it, so who are we to argue?


Double up the sauce


The quantity of tomato sauce in this recipe coats the spaghetti beautifully, but it's a thin layer of sauce.

If you'd like the spaghetti saucier, just cook a few more tomatoes, or double up the recipe.

It's as easy as that.

I like it like this, Graham is easy either way, but the boy always likes it with more sauce.

How long will the roasted tomato sauce keep?


Make this freshly roasted tomato sauce to use right away or make it ahead for later.

Once cool, pop it in the fridge in an airtight container.

It will keep fresh and gorgeous for 4-5 days.


Can you freeze air fryer sauce?


Yes, this air fryer tomato sauce freezes really well.

Once cool, pour it into a reusable labelled freezer bag or tub.

Keep it in the freezer for up to 3 or 4 months.

To defrost, leave in the fridge overnight, then reheat the next day.

So why not make a few batches with the best summer tomatoes and freeze if for quick dinners through the winter.

How to make air fryer spaghetti sauce

Air fryer spaghetti sauce - step 1.

Step 1

  • Boil the water for the pasta, then start making this sauce. Once the pasta is nearly cooked, scoop out some of the pasta water for the sauce.
  • Halve the tomatoes and place them in the drawer of your air fryer or in an ovenproof dish that fits an air fryer with shelves (place it on the lowest shelf).
  • Sprinkle the herbs, flavourings and seasoning on the tomatoes.
  • Drizzle with olive oil.
  • Then drizzle with balsamic glaze (optional).
  • Roast the tomatoes in an air fryer (or oven). The full recipe and instructions are below.

Step 2

  • Place the roasted tomatoes in a food processor or blender with some fresh basil and some pasta water (if you don't have either you can use a stick blender in a tall, large jug).
  • Whizz until you have a smooth, silky sauce.
  • Toass through freshly cooked spaghetti and serve.
  • Enjoy!

Air Fryer Roasted Tomato Spaghetti Sauce

An easy and quick air fryer roasted tomato spaghetti sauce. A fresh pasta sauce made with ripe tomatoes while the pasta cooks.

Ingredients

  • 5 large ripe tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 pinch chilli flakes (optional)
  • 1 pinch garlic powder
  • 1 pinch salt and pepper
  • 1 tablespoon olive oil
  • 1/2 teaspoon balsamic glaze
  • a small handful fresh basil

Instructions

  1. Boil the water for the pasta, then start making this sauce. Once the pasta is nearly cooked, scoop out some of the pasta water for the sauce.
  2. Halve the tomatoes and place them in the drawer of your air fryer or in an ovenproof dish that fits it in a single layer.
  3. Sprinkle the oregano, chilli flakes (optional), garlic powder and salt and pepper over the tomatoes.
  4. Drizzle them with olive oil.
  5. Then drizzle balsamic glaze (optional) over them.
  6. Roast the tomatoes in an air fryer (or oven) at 200c / 400f for 12 minutes until slightly charred, soft and juicy. They may need a few more minutes if you are using the oven.
  7. Place the roasted tomatoes in a food processor or blender (if you don't have either you can use a stick blender in a tall, large jug). with a few fresh basil leaves and a generous splosh (2 tablespoons) of pasta water
  8. Whizz until you have a smooth, silky sauce.
  9. Toss through freshly cooked spaghetti and serve.
  10. Enjoy!

Notes

  • You can add extra tomatoes, seasoned the same way for a thicker coating of sauce on your pasta, or just double the recipe.
  • I served it with 400g of freshly cooked spaghetti.
  • Chill it - Once cool, pop it in the fridge in an airtight container. It will keep fresh and gorgeous for 4-5 days.
