A Quick Supper for Toddlers

Cooper loves veggie sausages or veggie burgers with beans. He doesn't have it often, but it is sometimes a nice change for him. I was looking at some falafel in the supermarket and thought, "oh, he might like that too!". He doesn't mind eating spicy food and falafels are quite gently spicy. I bought him Cauldron Falafel, which are quite low in salt and lovely they are too.

And so I concocted this storecupboard supper, which he gobbled up. He just loves it! Of course I had a wee try and you may want to try it, it's tasty stuff.

Falafel, Peas & Beans

6 falafels, baked according to the packet instructions (or homemade if you have time)
1 x 400g tin baked beans (low sugar & low salt)
½ x 400g tin chickpeas, rinsed well
½ cup frozen peas
4 tbsp water
2 tsp tomato puree

Simply warm up all the peas and beans with the water and tomato puree and serve with the falafel.

Makes 3-4 toddler portions

Such an easy but nutritious dish. The falafel are packed with protein, complex carbohydrates & fibre. There is calcium, iron, magnesium, phosphorus, potassium, zinc, copper, manganese, vitamin C, thiamine, pantothenic acid, vitamin B, and folate from the chickpeas. Protein, fibre, iron, calcium, low GI carbohydrates and lycopene from the baked beans and protein, folate, iron, manganese, vitamin A, vitamin C, vitamin K and thiamin from the peas.

  1. Looks great. I would eat that too. I have never made separate meals for my kids and us so it is important to me that the food served for them is tasty for an adult too. You obviously got this one right - going by the empty plate!

  2. Hey Louise, Cooper quite often eats the same meal as us, but I do some batch cooking for him, so I have meals in the freezer for him to have with his childminder and sometimes he would just turn his nose up at what we were having, especially salads, he just doesn't understand them yet.

  3. looks delicious - would feed it to sylvia if she would eat it - she would eat it all if served separately - though I have been experimenting with beans and peas in rice the last few days!

  4. Now that is a good idea for Cooper too Johanna! Isn't it funny how Cooper likes all his ingredients mixed together on a plate, preferrably with a sauce and Sylvia is the complete opposite and likes everything seperate with no sauce :)

  5. Yes, I'm still working on the salads thing. I tend to give them bigger portions of the protein or some bread with a little bit of salad and they are beginning to eat more and more of it so I think we're getting there!
I was always so glad to get past the puree stage with them both!
Cooper obviously has good taste, though - this is a great looking meal.

  6. I love that Cooper will eat mixed foods like the falafel casserole. My children were like that, too, usually willing to try whatever exotic combination I cooked. My granddaughter on the other hand, is so picky. I never know what to offer her, as she turns most combinations down. She will always eat cake! :D

  7. It makes me so happy to see children eating good food! Wholesome eating really starts in childhood. Way to be a good mother :)

  8. Looks like a very successful meal, judging by the empty plate.

My eldest son would eat anything and everything and my younger son was the complete opposite. Now they are both the same and eat like horses.

  11. I love falafel, not had it in ages though. Reckon I would be tempted to eat more than my fair share of this meal ;0)
