Veggie Sausage Wraps 

This Veggie Sausage, Red Pepper and Hummus Wrap makes a filling lunch or a light dinner. Equally it can be as simple or complicated as you like.

I filled our flour tortillas with homemade rocket hummus, traditional vegan sausages from Dee's Wholefoods, jarred roasted peppers and fried onions, but you could make your own sausages, roast some peppers and even make your own tortillas.

 Here are my recommendations for a homemade or shortcut wrap:  

Arugula Hummus

Tortillas


Homemade: Flour Tortillas
Shortcut: Mission Deli Wheat and White Wraps  

Hummus

Homemade: Rocket Hummus
Shortcut: M&S Hummus  

Sausages

Homemade:  Carrot and Black Bean Sausages
Shortcut: Traditional Vegan Sausages  

Roast Peppers

Homemade: Roast at high for 20 minutes until charred, pop in a bag to steam the skin off, peel off skin and slice.

Veggie Sausage, Red Pepper and Hummus Wrap
A very satisfying lunch or dinner wrap. Make as many or as few as you like and feel free to take shortcuts.
Ingredients
  • 1 flour tortilla
  • 2 tsp rapeseed oil
  • ½ onion, sliced
  • 2 tbsp hummus
  • 2 veggie sausages
  • ½ roasted red pepper, sliced
  • a good grinding of freshly ground salt and black pepper
Instructions
1. Gently fry the onion in the oil until soft in the same pan as the sausages.2. Spread the tortilla with the hummus and top with the well cooked sausages.3. Top with onion and slices of red pepper and season with salt and pepper.4. Fold in the sides and roll the wrap, then cut in half before serving.5. Serve with salad. 6. Enjoy!

  1. I found 'Lincolnshire flavour' vege sausages in a local shop to me that taste so amazing, I prefer snacking on them than meaty ones! I'll have them in my wraps, with a nice red onion chutney - heaven!

    1. Oh yes, veggie sausages would be great with red onion chutney. I think I'd maybe have that on a sandwich rather than a wrap. A nice thick wholemeal or seeded bread.

  4. looks great - I love stuffing a wrap with leftovers of any sort - recently had a curried chickpea and eggplant dish in a wrap that was delicious - love the look of your green hummus

  6. My current fave wrap is a burrito make with smoked paprika flavoured spicy beans and vegan cheese with olives and salad. This one looks brilliant too- hummus is a staple for us! love the shortcut versions too.

  14. We're addicted to wraps in our house Jac... sausages, fishfingers, mushroom & halloumi, houmous and grated carrot... you name it, we'll wrap it!
    The boys are far more likely to try new things if they're in a wrap... somehow it makes them less suspicious!

  15. I like your homemade-bought suggestions. The homemade versions could pretty much be made ahead and pulled from the freezer and be ready at the same time as using bought! I even freeze hummus and it's just fine that way. I tend to stick to Mexican but also Japanese influences in wheat wraps, but we also like to do blanched cabbage leaves as wraps too (my kimchi and avocado wraps are a current fave).

    1. You are right Kellie, it is best to have homemade. I just need a bigger freezer. Just have room for some frozen veg and fruit and that's about it.

  18. I love veggie sausages with fried onions and peppers but now I will try out your way with the hummus. I also think M&S makes the only decent shop bought variety out there. It is so good! Great post and love the shortcut suggestions too!
