Sticky Toffee Pudding Raw Energy Balls

Raw energy balls are made from flax seeds, almonds, dates, baobab powder, cinnamon and cacao. A powerhouse of nutrients and very, very tasty with a flavour of sticky toffee pudding.

Cancer Research is my charity of choice. For years now I’ve had a direct debit set up to send them what I can each month. They do such good work developing treatments to help beat cancer and the sooner they can beat it the better for all of us.

Each year Cancer Research UK (CRUK) hold Race for Life events, which are woman-only events to help raise money for research into as many as 200 types of cancer.

Since 2012 ScottishPower have been working with CRUK to help raise funds, through various initiatives, including sponsorship of Race for Life and have so far raised over £9 million.

Four years ago ScottishPower developed the High 5 campaign to help with the fundraising. The idea is a high five is a symbol of achievement and celebrating.

ScottishPower would like us all to raise our energy and awareness by taking part in the High Five campaign. To show support and give a much needed boost of energy to the runners in this year’s Race for Life Events, I've created some raw energy balls, that can help increase energy and fight fatigue during a race.

Raw energy balls are made from flax seeds, almonds, dates, baobab powder, cinnamon and cacao. A powerhouse of nutrients and very, very tasty with a flavour of sticky toffee pudding.


My raw energy balls are made from dates, flax seeds, almonds, coconut oil, baobab powder, freshly grated cinnamon (from Cinnamon Hill) and cacao.

A powerhouse of nutrients, they taste quite like sticky toffee pudding. I'm hooked!

A word to the wise before you make these. If you don't have a power blender like mine, go easy when making these. If your blender shows any sign of distress turn it off immediately and give up on the idea. I made mine in my Optimum G2.1 blender which is very powerful. I made them gently on the grind setting which first turned the nuts and seeds into flour, then blended in the other ingredients, stopping and giving it a stir.

Sticky Toffee Pudding Raw Energy Balls
Raw energy balls are made from flax seeds, almonds, dates, baobab powder, cinnamon and cacao. A powerhouse of nutrients and very, very tasty with a flavour of sticky toffee pudding.
Ingredients
  • 250 g almonds
  • 2 tbsp flax seeds
  • 2 tbsp cacao
  • 2 tsp baobab powder
  • a good grinding of fresh cinnamon (or ground)
  • 180 g dates, stones removed
  • 2 tbsp coconut oil
  • enough sesame seeds to coat the balls (a small bag is plenty)
Instructions
1. Grind the nuts with the seeds, cacao, cinnamon and baobab powder until you have a powder.2.Add the dates, coconut oil and peanut butter and blend slowly until you have a moist mixture.3. Roll small balls of mixture in your hands, then roll each ball in sesame seeds.4. Keep in the fridge for impromptu nibbles.5. Enjoy!

  1. As a runner I can tell you these are such a delight vs the factory made crap that is out there. I think these are a perfect post long run snack for a Sunday. I'll look forward to enjoying them with a glass of coconut milk. Great recipe Jac

  2. I have never tried baobob powder, what is it like, flavour-wise? The balls look delicious, love that they are healthy and tasty too.

    1. The baobab has a slightly fruity flavour, although I add it as a nutrient boost rather than a flavouring.

  8. I'm so in love with energy balls right now. They taste as good as any sugary treats, but without being quite so bad for you. I like your addition of baobab, nice one.

  9. hi, you mention peanut butter in the instructions but it's not in the ingredients. how much of it do you use?

    1. Whoops! I typed up my recipe after my first batch, but I made them again without the peanut butter as I thought it was too strong a flavour. I obviously tweaked my recipe but forgot about the blurb. Well spotted and corrected.
