BBQ Tex-Mex Coleslaw

A simple recipe for a BBQ coleslaw with a Mexican twist. Forget bland slaws, this is the one you need.



It's handy to have a good coleslaw recipe up your sleeve and I have one, but it's a fairly standard coleslaw made with shredded white cabbage, carrot and red onion. Oh and lot of fresh dill. I love fresh dill in my coleslaw. In fact I add it to my potato salad too.

It's BBQ season again and I wanted a more exciting coleslaw to serve alongside bean burgers, tofu skewers, potato salad and pasta salad.

This is it. Tex-Mex coleslaw!





Rainbow Salads


It is said we should all aim to eat a rainbow of vegetables to make sure we get as many nutrients as possible.

Well this salad does that. 

Of course you won't get a full portion of each of the vegetables in this colourful salad, unless you eat a heck of a lot of it, but it all helps

Of course a rainbow of vegetables also brings a rainbow of colours and flavours.



BBQ Tex-Mex Coleslaw


This vibrant salad is made with much more than white cabbage and grated carrot.

  • Shredded white cabbage
  • Shredded red cabbage
  • Grated carrot
  • Thinly sliced red onion
  • Sliced red pepper
  • Cooked sweetcorn
  • Fresh coriander
  • Spiced creamy dressing

My Tex-Mex coleslaw is gently spiced, but if you really want a kick, why not add slithers of chilli pepper to the mixture too?

Coleslaw Dressing


The dressing for this slaw is mayonnaise based with some lime juice to cut through the thick texture and spices to give it a kick.

When you make this coleslaw you can use your favourite mayonnaise. I used Hellman's vegan mayonnaise which is still super creamy like the original, so we could all enjoy it, but use what you prefer or even make your own mayo.

I made enough dressing for a thin coating as I wanted the flavours of the vegetables to sing, but if you prefer a thicker dressing on your coleslaw, double the mayo and spices in my recipe, but not the lime juice. Add the lime juice, but don't double it.

Summer BBQ Tips

10 tips to take the stress out of BBQ and make sure they run smoothly.


  1. If you're vegetarian or vegan and going to a BBQ take the stress out of it for everyone and take a portable BBQ with you. That way your hosts won't feel stressed (especially if they forget you will want to grill separately) and you'll be happier too. You may also want to take a few burgers, just in case.
  2. Buy a cheap portable BBQ rather than a disposable one. Apart from the throw-away nature of a disposable BBQ, there just isn't much room on them and they don't get as hot as a traditional BBQ.
  3. Line the bottom of the BBQ with a double layer of baking foil for easy clean up after grilling.
  4. Give the coals time to get to the right heat, don't try to speed it up by pouring anything on it. Apart from being dangerous, you really don't want any chemical fumes on your food. You need to allow for at least half an hour.
  5. Chill or even pop homemade veggie burgers in the freezer before grilling, to keep them from falling apart while cooking.
  6. Soak wooden BBQ skewers in water for half an hour before grilling to stop them from burning on the BBQ.
  7. Make your salads and marinades ahead of the BBQ and chill in the fridge so you have time to relax and enjoy the BBQ and your friends.
  8. Keep it simple. Have a mixture of homemade and bought dishes to cut down on the stress. Even just a couple of good homemade dishes will make all the difference.
  9. Buy a big bag of ice cubes from the supermarket just before your BBQ and fill a bucket or basin with ice to chill beer, cider and soft drinks, to leave room in the fridge for other things. Everyone can help themselves. For a faster chill, add some salt to the ice.
  10. Make dessert on the BBQ too. Add some vanilla and brown sugar to peach or nectarine halves and wrap in foil then add to the grill. Bananas can be added straight to the grill with their skins on, then slit open and sprinkled with brown sugar. Serve both with vanilla ice cream, whipped cream or whipped coconut cream.

BBQ Tex-Mex Coleslaw

A colourful homemade coleslaw full of vibrant vegetables in a spicy, but creamy sauce. Perfect for lunches, BBQs and picnics.

ingredients:

  • ½ small white cabbage
  • ¼ small red cabbage
  • 1 large carrot
  • 1 red pepper
  • 1/2 red onion
  • 160g/½ cup sweetcorn (tinned or freshly cooked)
  • a handful of fresh coriander
  • 6 tbsp mayonnaise (vegan or vegetarian)
  • ¼ tsp chilli powder (more if you want it spicy)
  • ½ tsp paprika
  • Juice of I lime
  • salt and pepper

instructions:

How to cook BBQ Tex-Mex Coleslaw

  1. Finely shred both types of cabbage.
  2. Finely slice the red onion and red pepper.
  3. Grate the carrot.
  4. Combine all the ingredients in a large bowl,  mix and season with salt and pepper.  Reserve coriander to sprinkle over the coleslaw.
  5. Enjoy!

NOTES:

This coleslaw with keep fresh in an airtight container in the fridge for 2-3 days.

  1. I love the sound of this and it is so beautiful with all the colours - I usually put red cabbage in my coleslaw but the corn and spices sounds great - in fact I have so many limes off the tree I should try this soon.

    And my bbq tip is to put some foil on your part of the bbq so you can share a bbq with others but not have the meat flavours all over your food. Also if you do vegie sausages they tend to be drier than meat ones so a little brush of oil on them helps. Love your bbq recipes - tandoori paste on haloumi sounds delicious.
