Creamy Cauliflower Soup


A good cauliflower soup is the taste of winter and this is a really good cauliflower soup!

Just a few basic ingredients so the flavour of the cauliflower has a chance to shine through, but with a bit of a boost so it tastes even better than nature intended.

I cooked and blended this soup in my new Froothie Evolve Blender, which I will tell you about later, but you can cook this in a pot on the hob then blend until silky smooth in a blender or with a stick blender.

Soup Toppings


The soup is naturally creamy and silky when blended but for a bit of luxury I add a drizzle of cream, some freshly chopped chives and a good grinding of black pepper before serving.

You may use your favourite cream, either veggie or vegan.

A good tip is to add the cream at the end and gently swirl through the soup so you can enjoy spoonfuls of naked soup, some with a hint of cream and some which are really rather creamy. 

Much more interesting to eat than blending the cream through it evenly.

Christmas Soup Toppings


If you are making this for Christmas, buy a bigger head of cauliflower, reserve a few florets and pop them on a baking tray. Spray them with a little oil and season with salt, pepper and a sprinkle of paprika, then roast.

Serve each bowl of soup topped as before with cream, chives and black pepper, but also add the florets of roast cauliflower.

JUG 1 (vacuum)


The first jug is 1.8 litre and includes a vacuum function. This can be used like any high speed blender. 

Jug 1 - What to use it for


  • crushing ice
  • nut butter
  • chocolate spread
  • pesto
  • hummus
  • pasta sauce
  • pizza sauce
  • nice cream 
  • sorbet
  • frothy milkshakes
  • lemon or lime curd (no whisking until your arm hurts)
  • custard
  • cheese sauce
  • falafel mixture
  • burger mixture
  • pancake mix

Jug 1 - With vacuum


  • The vacuum is used to make the perfect smoothie. 
  • The vacuum sucks out the air before it blends, this means the smoothie won't separate, you won't get the heavy froth at the top and the removal of air means the smoothie doesn't oxidise, 
  • The nutrients remain and the smoothie doesn't discolour, meaning you can blend the night before for a perfectly fresh smoothie the next day (just pour it into a sealed container and keep in the fridge overnight.)

JUG 2 (cooking)


The second jug has a heating element, so you can actually cook and not just warm through friction, as with other blenders. 

This jug comes with a steaming basket, so you can steam individual portions of vegetables, which is great for an lunch, an evening meal for one and you can then blend to make a sauce or if you have a wee one, some baby food.

Soup in a blender


Most blenders warm soup through heat building through friction, which can be fine for a raw soup, but cooked soup tastes much better.

Some vegetables like potatoes, turnip and parsnips really don't work well in an uncooked soup and go gluey. It's not a good texture or flavour.

With an uncooked soup the flavour isn't there and you have to transfer the soup to a pot to heat, which is just more faff and more dirty dishes.

With the EVOLVE blender you can add your vegetables and stock or water and choose either chunky soup or smooth soup and it will do all the work for you in under half an hour. 

Just hit the button or ask it to make soup and leave it while you get on with other things.


Self-Cleaning Blender


Once you've finished blending or cooking in your Evolve, just add about 4 inches/10 cm of water, a couple of drops of washing up liquid.

Options 

  1. Press the clean button on the digital display
  2. Choose the clean function on the Evolve app on your phone
  3. Use voice activation and say Hey Froothie, clean my blender.

Once it is clean, simply rinse it out at the tap, always being careful not to get any water on the base where the heating element is.

The outside of the jugs just needs a quick wipe.





Voice Activated Blender


Sometime when you're in the kitchen you're trying to do too many things at once, or your hands are dirty and you really don't want to touch your blender.

Just load it ahead with your ingredients/ When you need it to start just say Hey Froothie and tell it which cooking, blending or cleaning option you are choosing and she will get started.

Creamy Cauliflower Soup

A creamy cauliflower soup made in a blender with a few basic ingredients. Includes instructions for cooking in a pot on the hob.

ingredients:

  • 1 medium cauliflower
  • 1 onion
  • 1 clove garlic
  • 2 stacks celery
  • 1 litre/3 1/2 cups vegetable stock
  • salt and pepper
  • 1 tbsp finely chopped chives (optional)
  • 2-3 tbsp cream, dairy or vegan (optional)

instructions:

How to cook Creamy Cauliflower Soup

Cook in EVOLVE blender
  1. Cut the cauliflower into florets, the onion into quarters and the celery into chunks.
  2. Make up your vegetable stock with hot water and 3 vegetable stock cubes.
  3. Place the large florets of cauliflower into the blender jug first, then the onion, celery and garlic.
  4. Add the stock, salt and pepper.
  5. Place the lid on blender jug tightly, place the jug on the base, switch on and choose smooth soup function, then hit the on function again to start. You could also ask it to start by speaking to the blender or using your app.
  6. Once the blender has cooked and blended the soup, serve while hot.
  7. Enjoy!
Cook in pot on hob
  1. Prepare the veg. Cut the cauliflower into florets, finely chop the onion and celery and crush the garlic.
  2. In a large pot saute the onion and garlic in 1 tbsp olive oil until soft, then add the celery and give it a few more minutes.
  3. Add the florets of cauliflower and the stock.
  4. Season with salt and pepper.
  5. Bring to a boil, then reduce to a simmer and leave to cook for 30 minutes.
  6. Blend in a blender or with a stick blender.
  7. Serve while hot.
  8. Enjoy!

NOTES:

This soup can be frozen.
This soup can be kept in the fridge for 3-4 days.
If you are cooking on the hob, cut the onion and celery finely.
When cooking in pot on the hob, the onion and garlic are sauteed in oil so remember to add extra calories for the oil.
