Spiced Moroccan Pâté


I bought some ciabatta for a light dinner. Then I had a moment. Graham is a vegan now. What the heck was I going to put on his ciabatta before I toasted it? We usually add some sort of cheese to our filling. Feta, halloumi, mozzarella........     

I put my thinking cap on and came up with this spiced pate. Of course, I made it in my Vitamix. Have I told you how much I love my new toy yet?

The final ciabatta, was toasted lightly and spread with a thick layer of pate, topped with a layer of puy lentils with sundried tomatoes, then topped with a layer of thinly sliced red onion that had been marinated in balsamic vinegar. Graham pronounced it yummy! Yes, that as descriptive as his critique gets, bless him.

I would have added some garlic to the pate, but hubby isn't keen on garlic. It tasted pretty good without it. It tastes fairly mild, then you get a kick from the chilli.

Spiced Moroccan Pate
A smooth, spicy pate that is suitable for vegans and packed with protein. Made in minutes.
Ingredients
  • 100g cooked chickpeas
  • 100g firm tofu
  • juice of ½ lemon
  • 2 tbsp olive oil
  • 2 tsp ground cumin
  • 1 tsp turmeric
  • ½ tsp chilli powder
  • ½ tsp cayenne pepper
  • a good grinding of salt
  • a good grinding of black pepper
  • a dash of worcestershire sauce (veggie) -optional
Instructions
1. Blend all the ingredients in a Vitamix or blender. You could mash the ingredients, but you wouldn't get the same smooth finish. 
2. Check the seasoning and top with a dash of worcestershire sauce.
3. Serve on oatcakes, in ciabatta, in panini, on a tortilla wrap or with crudités. Oh and it would be good on toast too. 
4. The pate will sit happily in the fridge for a few days.

  3. sounds delicious - I would add a little garlic because I love a bit of bite (though not too much!) - I like the combination of chickpea and tofu and then sound of the sandwiches - can highly recommend the vegan cheese I made on my blog last month

    1. Yes, you can buy it quite easily here in the UK. The original sauce has anchovies in it.

  6. Okay, I confess...not only am I not vegan, I'm not vegetarian either! However, I really like the look of this veggie pate and I have some chickpeas in the cupboard. I don't have a vitamix but my food processor should be able to cope with this.

  7. It's great to blend in minutes a yummy pate like this! I'm not vegan or vegetarian but I prefer vegetables fillings (no cheese or eggs). I would add garlic to it because I like the flavour!

  8. Oh yummers! I am loving the look of this, pates like these go down easily in my house. My husband is pescitarian and Aditi is vegetarian and I can easily see them loving it.

    When did your husband go vegan, by the way? And I LOVE that bowl too, so pretty!!

    1. He has been vegan for about 6 weeks now, maybe longer. He is doing really well. I'd hate it!

  11. Sounds like a delicious pate to me. And no, I wouldn't have put garlic in there because I have a hatred of garlic! It's very irritating because so many bought spreads have garlic in them. Good Luck to Graham on being vegan, and to you, catering for him!

  14. Made this last week and it is truly delicious - quite firey tho but I really like that. Have used it both as a dip and a spread on warm middle eastern flatbreads when making wraps. To die for! Tks for sharing.
